Deviled Eggs
12 large eggs
1/2 cup mayonnaise
2 teaspoons brown or yellow mustard
2 tsp of Hot Sauce
1/4 cup finely chopped sweet pickles
1/4 cup finely chopped celery
Cover eggs with cold water by 1 1/2 inches in a 4- to 5-quart pot and bring to a rolling boil, partially covered with lid. Reduce heat to low and cook eggs, covered completely, 30 seconds. Remove pot from heat and let eggs stand in hot water, covered with lid, 15 minutes. Rinse eggs under cold water 5 minutes to stop cooking.
Peel eggs and halve lengthwise. Carefully remove yolks and mash in a bowl with a fork. Add mayonnaise, mustard, pickles, hot sauce, celery, salt and pepper to taste to yolks and stir with fork until combined well, then spoon into egg whites.
Cooks' note:
Deviled eggs can be assembled (but not garnished) 2 hours ahead and chilled, covered.
Makes 12 hors d'oeuvre servings.

Boil eggs (start in cold water). Run lots of cold water over them when done (9-10 minutes of boiling) so they will peel easy.
Peel, slice in half. Put all yolks in a bowl, add a glop of mayonnaise, a little vinegar, a tad of yellow mustard and some dill pickle relish and salt and pepper. Can't say how much, cause I don't know how many eggs you cooked, but if you want to make devilled eggs, you've probably eaten them before. You know what they taste like. For an unusual taste, just a little kick, you can use some blue cheese dressing instead of some of the mayo.

Hard-boil the eggs & make sure to run a lot of cool water over them after they have cooked. The cool water is important because if you don't do it, the eggs will be harder to peel.
When they are completely cooled, peel the shells off and cut the eggs in half lengthwise.
Pop out the yolks and mash them up with a fork.
Add mustard and mayo to taste, mix it all up and plop some of the mixture back into the egg halves.
Some people like to add pickle relish, but I don't. Ditto paprika on top.

Hard Boil eggs. Peel and cut them in half length wise. Gently remove the hard boiled yolks. Put all of the yolks in a bowl and mash them up with a fork. Slowly added Mayo until you get a creamy consistency. Mix in a little mustard and some salt. Scoop the mixture back into the eggs. Sprinkle with some paprika. I also like to add some crumpled on top.

Boil the eggs in water for about ten minutes. Run cold water over the eggs and then peel off the peelings. Slice the eggs down the middle and remove the yellow. Place all the yellows in a bowl and add mayonnaise until creamy, mustard, and sweet relish. Put the mixture back into the shells and then add a little paprika for a little color addition.

First you need to hard boil the eggs---cover them in a pan with cold water, bring them to a boil over med. high heat, remove from heat, cover and let sit for 12 minutes. Rinse with cold water 'til cool enough to handle and peel.
Slice eggs length wise, putting yolks in a small bowl and setting whites aside.
Mash yolks with a fork, add salt and pepper to taste.
Add a teaspoon of yellow mustard , a drop or two of vinegar and enough mayonnaise to bring yolks to a smooth consistency.
Spoon yolk mixture into egg white half .
This is a very basic deviled egg, you can get fancy by making additions to the yolk mixture like some sour cream or a little diced onion, etcetera. Many people sprinkle paprika over the eggs for added color.
yolks with a fork, add salt and pepper to taste.

Boil the eggs at least 7 minutes. I always let mine cool in cold water then pour it off and peel and cut the eggs in half , lengthwise. Put the yellow in a bowl. Add mustard, mayo and I like a little pickle juice in mine with a little salt and pepper. Then mix it up really good. Go by your taste. Some people add relish, I don't. Then put the mixture back in the egg whites with a spoon. Put them on a plate and cool in fridge or just eat them that way, up to you. You can sprinkle paprika on them or add olives as a garnish. good luck. You can't mess up.

We love deviled eggs...here is the way we like them...
boil the eggs....add lemon juice or salt to the water..bring to a boil cover and turn off the heat let set for about 16 minutes...then place in ice water...for a few minutes to chill quickly..then crack carefully and peel the shells off......then cut in half....and scoop out the yolks carefully...
take a fork and mash the yolks...add a little yellow mustard, sweet pickle relish, mayonnaise, salt and pepper just a little....mix these together...and stuff the white..shells...place on a lettuce covered plate...and shake paprika over them.....or you can be creative and add tiny baby boiled shrimp on top......or fried bacon pieces.or chopped parsley..do your own thing..best of luck....Mama Jazzy Geri
