As a base, I use one from foodtv.com. search for Texas chili, then use the Tyler's Texas chili recipe. I have tweaked this a bit and have won several chili cook offs with it. In place of the 1 tbs chili powder, I use 1/2 tbs of McCormick Texas chili powder, 1/2 tbs of ancho chili powder and 1/2 tbs of chipoltle chili powder. (i know this makes 1 and 1/2 tbs. but that's okay.) The different chili powders give the spice mix a couple of new depths in flavor and add a lot. Use any chili powders you can find, but try mixing at least three. I also replace the water in the recipe with 1 bottle beer, and 1/2 cup of tequila. The key to my award winning recipe, though is that I smoke the chuck roast, then cube it and add to the chili. If you don't have a smoker, you can can come close to the flavor by adding 1 and 1/2 tbs of liquid smoke to the chili, preferably a mesquite flavored one.
No matter what recipe you end up using, though, remember, Real chili does not have beans, nor does it have pasta in it. (Sorry Cincinnati, but you guys are wrong)

1 lb dry red kidney beans
1/2 lb dry pinto beans
8 cups water, plus additional water when beans are getting low (watch closely so they do not boil dry)
1 large onion, diced
1 head garlic, minced
2 teaspoons salt
2 teaspoons black pepper
2 large bay leaves
1 tablespoon oregano
1 tablespoon crushed basil
1 teaspoon rosemary
1 lb lean ground beef
1 lb ground pork
2 (7 ounce) cans chopped green chilies
2 (28 ounce) cans stewed tomatoes, undrained and chopped (DO NOT add until the beans are done. The acid will prevent the beans from becoming soft)
2 teaspoons celery seeds
3 tablespoons chili powder (more to taste)
3 tablespoons cumin (more to taste)
1 tablespoon crushed red pepper flakes
1 bottle beer
1 tablespoon sugar (to cut tomato acid)
Wash dry beans well.
Fill a large pot with the 8 cups of water.
Add the dry beans, garlic, onion, salt and pepper, bay leaves, oregano, basil and rosemary leaves.
Simmer until beans are done, (about 2 hours) adding more water as needed (dry beans will use a lot of water) In the mean time, brown beef and pork, drain well and set aside; add to beans when they are done.
Add green chilies, tomatoes with juice, celery seed, chili powder, cumin, red pepper flakes, beer, and sugar.
Simmer 30 minutes to blend the flavors.

Chasen’s Chili
1/2 lb. Pinto Beans
5 cups canned Tomatoes
1 lb. chopped Bell Pepper
1 1/2 tbs. Vegetable Oil
1 1/2 lb. chopped Onion
2 cloves Garlic, crushed
1/2 cup chopped Parsley, fresh
1 lb. Ground Pork
2 1/2 lbs. Chili-ground Chuck
1/3 cup Chili Powder
1 1/2 tbs. Pepper
2 tbs. Salt
1 1/2 tsp. Cumin
Wash pinto beans and soak overnight. Simmer in soaking water till tender. Add tomatoes and simmer 5 minutes. Sauté green peppers in oil for 5 minutes. Add onions and cook till tender. Add garlic and parsley. Sauté the pork and beef in butter for 15 minutes. Add meat to onions, tomato and green pepper mixture. Stir in chili powder and cook 10 minutes. Then add beans and other seasonings; simmer for 1 hour. Uncover the pot and simmer 30 minutes more. Skim grease. Serves 8.
