wHEN YOU CUT LETTUCE AND PUT IT IN THE FRIDGE....iT SOMETIMES TURNS BROWN. wHY???

Injury. Tear the lettuce when possible it won't brown as quickly. There use to be plastic lettuce knives on the market that were to help this but they really didn't all that much.

The browning of the lettuce, whether cut or torn is called 'rust' and is the normal oxidation of the alkalai present in the plant. This happens whether refrigerated or not although it happens faster in the refrigerator because the air can hold more oxygen in a cold and humid environment. There is nothing wrong with this other than asthetics.

Oxidation occurs when the lettuce is cut and air can get to the cut areas - that makes it turn brown.

cutting it opens up all the little "veins" that the plant uses to transport water from the soil to the leaves. Ones the "veins" have been opened, much like opening a person's veins, the life-giving fluids drain out, causing the leaf to start to die--thus the brown color.

Physically tearing the lettuce preserves more of these "veins" and delays the browning of the vegetable...

YES, it does turn brown. It's called bleeding. Ripe it apart and it will stay green. Cut only the lettuce you are going to use at that time.

If you use a knife and cut it will turn brown.Pull lettuce apart,if you have any left over on the head rap is in paper towel put in crisper part of fridge should keep for a few days.don't cut with a knife pull apart.

its the oxygen i believe another person explains it they sell a round container to keep lettuce fresh i believe you can get it at walmart for like 7 bucks or something. It works great and keeps lettuce for at least 3 weeks.

Just dont cut the lettuce or tear it or even risin with water that aslo make it trun brown. Also cause by grems.

because of a thing called oxygen, once anything is exposed to oxygen it begins to oxydize.keep your lettuce leaves in a bowl of water this will reduce the oxygen exposure and keep the lettuce krispier for longer
