OMG! Panic has sunk in! I have to cook dinner tomorrow night for my boyfriend. I haven't got a clue let alone a good idea. Do I look like a doe in the headlights? I feel like one!

OK - so what is your best casserole recipe? Can I have it??? Oh, and he does not like any Mexican food. What's up with that?!?!?

Quick Chicken Divan....serve over rice with some nice white wine!

INGREDIENTS
2 (10 ounce) packages frozen chopped broccoli
2 cooked boneless chicken breast halves, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup mayonnaise
1 teaspoon lemon juice
1 1/2 cups shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place broccoli in the bottom of a 9x13 inch baking dish. Top with the chicken.
In a small bowl, blend the cream of chicken soup, cream of mushroom soup, mayonnaise, and lemon juice. Pour the mixture over the chicken. Top with Cheddar cheese.
Bake 35 to 40 minutes in the preheated oven, until bubbly and lightly browned.

very easy! looks great on a plate!

I have a few REALLY EASY recipes....Italian in theme.

1.) Tomato Soup (I swear he will think you cooked all day.)

1 can campbells soup
1 Tablespoon Dill weed
1 Tablespoon Garlic
1 can petite diced tomatoes
1/2 cup whipping cream

Bring soup, spices and tomatoes to a boil. Turn off the heat and add the cream. Mix well. (It tastes like gourmet, honest!) Serve with some "artisan bread" you can rip and dip.

2.) Bruchetta Stuffed Chicken

8 small chicken breasts
! package Stove Top stuffing
1 Can italian diced tomatoes
1 Cup Mozarella Cheese
Light done Right Italian Dressing.

Place two of the chicken breasts into a ziploc bag. Pound with a can until it is 1/4 inch thick. Repeat until all chicken is done

Heat oven to 350 Degrees

Mix stuffing, tomatoes (with juice) and half of the cheese until stuffing is moist.

Divide the stuffing onto the chicken breasts and wrap like a burrito. place seam side down in pan.

Drizzle dressing over chicken. Cook about 40 minutes or until chicken is done. Put the rest of the cheese over the stuffed chicken and bake for 5 more minutes. Viola!

Dessert:

Oreo Truffles (These are really easy!)

2 packages bakers semi sweet chocolate
1 Package Oreo cookies
I package cream cheese

Remove 9 cookies. Crush the remaining cookies in a ziploc bak until fine (you can use a can.) Mix cookie mixture with cream cheese u ntil well mixed.

Melt baker's chocolate in the microwave on half power stirring every 30 seconds until melted.

Roll the cookie mixture into balls and dip it in the chocolate. Refridgerate for 1 hour. Delicious! (I get more compliments on these it is not funny....and so easy. I almost feel guilty not sharing the recipe!)

Enjoy the moment with your boyfriend and make some dishes the night before so you can shower and get dressed and not be a nervous wreck when he arrives....Here are some suggestions:
First make the dessert whip it up and refrig. it
then a salad that is marinated and tastes best the next day.
You can also make a simple soup and heat it also the next day.
the flavors will be much richer when you serve them.
First the dessert. Get some cool whip, chocolate pudding you cook that comes in a little box, and toast some shelled nuts like almonds or walnuts. whatever you like. Make the pudding as directed and keep in refrig. When you plate it. Take a tall parfait glass or iced tea glass or large wine glass and layer the cold pudding , the cool whip alternately...then top with the toasted nuts...and drizzle some choc. syrup too if you like...or shaved choc.

now for the salad...wash a bunch of romaine lettuce the night before and put in a plastic bag...then cut up red, green, yellow sweet bell peppers and marinate in Italian dressing overnight get some fresh mozzarella cheese..in a brine ...and cut it up and add to the peppers...place peppers and cheese on a mound of lettuce....for each serving..

I hope he likes fish.....you can't go wrong with serving this...
get about 6 pieces of talapia fish..it's meaty...not smelly at all and you can do anything with it.....and it cooks fast....you can make some steamed rice and serve the sauteed fish over it....for the main dish....select a special seasoning for fish that you like...I use Old bay...and sprinkle this on the fish ...and place the fish in a frying pan with a little olive oil and butter...heat it until bubbling..and then saute it on both sides ...and squeeze lemon over it....before serving.........get a quick rice in a box...and follow directions...buy some Italian parsley for garnish...make sure it's wash and dried ahead of time like the night before...

If you want to serve soup too do this the night before boil a chicken breast with celery, onion and carrot salt and pepper then cook and strain it ...or use 2- 16 oz cans chicken broth and bring it to a boil...then lower the heat...then when you serve it top with some green parsley or cilantro and slivered mushrooms..when you are making the broth you can also add some tiny pasta shapes..like stars....

by preparing as much in advance you can enjoy your boyfriend's company and the food .....good luck!

Roasted chicken. Rinse a whole chicken off with water and pat it dry with paper towels, throw a couple of cut up lemons inside, and rub olive oil all over the outside Roast at 375 degrees, 20 minutes per pound. Serve with baked potatoes with butter and sour cream, and salad. To drink, a Hess or Ravenswood Chardonney are good wines. Be sure you have a wine opener. I'd probably buy a six pack of imported beer in case he's a beer drinker. Make you sure have a dessert. I would probably buy a choc. cake or apple pie for dessert. Choc. chip cookies are a good dessert too. Alot of guys stay away from mexican food because they either don't like spicy stuff, or it gives them gas, or both.

JOHN' S CORN CASSEROLE:

1/2 cup butter
8 1/2 ounces corn bread mix
16 1/2 ounces ounces canned cream corn
16 1/2 ounces canned whole kernel corn, drained
1 cup plain yogurt
2 eggs, abused (I mean beaten)

Preheat oven to 350 degrees (this is nearly impossible to do with a gas oven), grease a 13 x 9 inch baking dish.
Combine butter and corn bread mix; mix well. Add the cream corn, corn, yogurt and eggs; mix. Pour into prepared baking dish.
Bake 30 minutes. Serves 8.

It goes good with chicken or by it self.





Haunted House Cake
These tasty cakes might look spooky, but they taste delicious!
Prep time: 20 min.
Decoration time: 40 min.
Difficulty: Moderate
What you'll need:
1 bag M&M’S® Brand Milk Chocolate Candies Pumpkin Patch Mix
1 bag M&M’S® Brand Peanut Chocolate Candies Pumpkin Patch Mix
1 bag TWIX® Brand FUN SIZE® Bars
2 16-oz each cans vanilla frosting
Orange food coloring
2 16-oz each frozen pound cakes, thawed
1 box thin chocolate wafer cookies
1 tube black decorating icing or gel
2 resealable plastic bags
Spatula
What to do:
Tint the frosting orange and set aside.
Use 1/2 cup of orange frosting to spread on the bottom of both pound cakes then press them together. Stand the cakes up so that they are vertical on a serving plate.
Create the pitch of the roof by trimming the top of one cake on a slight angle to give it the appearance of looking tipsy. Trim the other cake on a steeper angle. Completely cover the cake with remaining orange frosting. Break the chocolate wafers in half and arrange, overlapping slightly, as the roof.
Using the photograph as a guide, pipe black decorating icing for the windows and other decorations. Add the TWIX® Brand FUN SIZE® Bars as the door and chimney. Use broken wafer cookies for the shutters. Use M&M’S® Brand Peanut Chocolate Candies Pumpkin Patch Mix to outline the top of the roof and sides of the house.
Grind the remaining cookies along with a few TWIX® Brand FUN SIZE® Bars in the food processor. Spread this mixture around the base of the house as "dirt". Scatter M&M’S® Brand Milk Chocolate Candies Pumpkin Patch Mix on the cookie "dirt".
Makes 1 house.

Spagetti Cassolrole

Can you make spagetti? If not, buy 3 cans of the best spagetti, Chef Boyardee is fine
1 small can of mushrooms, drained of the juice
chopped onion, about 1/2 a cup
1 clove of garlic, chopped, optional
about 3 to 4 cups of grated cheddar cheese. Freshly grated is better, but if you dont have time, buy the pre-grated kind in the deli section of the store.
Heat the spagetti, onion, mushrooms, and garlic in a pot until warm, then layer your cassarole dish, cheese 1st, then spagetti, cheese, spagetti, until the dish is full.
Cover and bake at 400 degrees for 20 minutes, remove the lid, and bake about 5 to 8 minutes, serve with a salad, and garlic bread. You can buy pre-made garlic bread in you grocery store's bakery. Heat it when needed along with your cassarole. Girl, if this man wants someone who cooks like Emeril Lagasse, he needs to date a girl who looks like him, or you had best take some cooking classes, LOL. Have fun,and GOOD LUCK!

Phooey, I was just going to tell you get already cooked fajita meat, slice some green peppers and onions and cook them with a little butter, warm up the tortillas and fix a box of Spanish rice to have on the side.
Here's an easy meal. Get ham steaks in the meat section (thick slices of ham already cooked). Heat it in the microwave or in a skillet. Bake 2 potatoes (wash, stab with a knife several times and nuke in the microwave for maybe 5 minutes). Open a bag of ready made salad, wash it, put into salad bowls. Set the table with butter, salad dressing, salt/pepper. Have a bakery cake for dessert or have ice cream with some topping.

I'm not God but maybe I can help you. This is an easy dinner. 2 boneless,skinless Chicken breast. 1 can of mushroom soup and seasoning salt. Wash the chicken breast and pat dry. Put in shallow pan/baking dish cover the breast ,lightly,with season salt and put mushroom soup over it. 1/2 can of water to the top of that. Put in 350 oven for about 30 to 45 minutes. About 20 minutes before time get a pot of water boiling going and add egg noodles to(boiling) water for about 10 minutes. Drain and serve with chicken. Pick-up salad at store. You are done!!! Whatever you do do NOT buy a frozen lasagna. Steak is easy to make and just put two potatos together in the microwave for 8 minutes but wash and punch some holes in them first and cook your steak which is as easy as cooking a hamburger and buy those tossed salads in the bags like it has the lettuce, cheese, etc already in it and buy some dressing and you're ready. Get a easy simple dessert like cookies or something..

Go to the grocery and pick up a stouffers lasagna. I like the vegetarian version. Grab a bag of salad and whatever you like to add. Some dressing. And a your favorite frozen garlic bread. Get a bottle of wine and a frozen dessert. You are all set! It will take less than an hour of your time and he will think you slaved all day. A few candles for good measure would be a nice choice. The bonus you can often prepare this meal for under $20.

Take two chicken breast and season to taste
Mix a can of cream of mushroom soup with a tub of sour cream.
Pour the mixture over the chicken and bake at 400 degrees until chicken is done (30-45mins)
I usually put mine with white rice or mashed potatoes. It sounds weird but really yummy! My family loves it. If you do the rice, buy the boil in the bag. Done in five mins! You can also buy some frozen rolls, pillsbury, and bake them up while the chicken is baking. Buy one of the Birdseye Steam Bag veggies, like five mins in the microwave and you are set.
