no, you don't want your dog biting and wrestling with you.
Playing retrieve and tug with a big, long toy is good...as long as you train it to release the toy to you when asked...keeps you the boss. You can get a rope and tie a toy to the end and run around letting the dog chase it
Train tricks for treats.
Or, look into the dog sports, rally, agility

Okay- just so you realize- if your dog is biting you, he believes he is in charge and is showing agression. This is dangerous in a large dog like a german shepherd. Biting should NEVER be allowed or encouraged.
But that said, you can play with a dog without biting. It all has to do with finding the right game.
- try tug of war
- try fetch
If your dog is young and still not interested, he may be timid. Try playing gentle games at first. Always allow him to come to you. If you chase him to get him to play with you, it only encourages him to keep avoiding it.
Otherwise- it sounds like you have an AWESOME dog. Most people want one like yours.

My german shep was like that too. He was so shy and timid that he was even afraid to come to me when i call him. With time (in my case 1 and a half years) he started playing and got really bold.
He has even torn some of my clothes while we were playing together. You can take him for long walks and encourage him when he barks, if that is what u want.
Everyone is careful with him around now, because he has really taken charge. Lol

Play with him, dont wait for him to play with you.
Roll on the floor and act crazy, let him see that its fun.
Dont just jump on him, roll around for a bit and dab at his legs lightly with your hands, or push him gently a few times, let him know your playing.
Do it day after day after day, he will play back.
Alternatively, you can get another dog for him to play with. But you still have to play.
