boneless & skinless: chicken piccata
1. butterfly the chicken breasts
2. dredge the pieces in flour
3. fry in a mixture of olive oil and butter for 3 mins on each side
4. remove chicken
5. add chicken broth, more olive oil, more butter, capers & lemon juice to the pan
5. add chicken breasts
6. cover
7. cook for about 15 mins
8. plate chicken and pour sauce over the chicken

I think this recipe is nice and easy have a chicken breast for each person cut a pocket in the side of the chicken breast then put cheese they say to use swiss cheese but use what ever you like then get pieces of bacon and wrap it around the whole chicken breast and secure with tooth picks, then put a little oil in a fry pan and lay the chicken breast in the pan do both sides until slighlty cooked and then finish of in the oven on a baking tray for anout 20 min but you will just have to keep checking it and serve with vegies of chips or what evere turns you on and don't forget to take out the toothpicks when you serve the chicken. its yummy try it

We just love the following recipe! Easy and delicious - Have fun! Sour Cream Marinated Chicken Breasts 1 cup sour cream 2 1/2 tablespoons lemon juice 1/4 teaspoon Worcestershire sauce 1 clove garlic, finely minced 1/4 teaspoon salt 1/8 teaspoon pepper 4 boneless chicken breast halves 1 1/2 cup Pepperidge Farm stuffing mix Melted butter (to taste) to drizzle over chicken just before placing in oven. Directions: Combine sour cream, lemon juice, Worcestershire sauce, garlic, salt, and pepper in a large bowl. Place chicken pieces in the bowl, turning to coat thoroughly. Cover and refrigerate overnight. Remove chicken and coat well with the stuffing mix. Arrange chicken in a greased shallow baking pan. Drizzle the chicken with melted butter. Bake at 350° for 45 minutes, until chicken is tender and juices run clear.

This is one of my favorites, as I love Italian food!
Oven-Baked Chicken Parmesan
4 boneless, skinless chicken breast halves (about 1 1/4 pounds)
1 egg, slightly beaten
3/4 cup Italian seasoned bread crumbs
1 jar (26 - 28 ounces) pasta sauce
1 cup shredded mozzarella cheese
Preheat oven to 400*F. Dip chicken in egg, then bread crumbs, coating well. In a 13x9-inch glass baking dish, arrange chicken. Bake uncovered for 20 minutes. Pour pasta sauce over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink. Serve, if desired, with hot cooked pasta.

My favorite recipe for chicken breasts is to cut them into bite size strips (you can always pound them first to make them more tender) and saute them in olive oil until golden brown. Remove from heat and place on paper towel to drain. I then (using same pan and adding just a dab more olive oil) add about 5-6 cloves of minced garlic (it's a matter of taste, you can use more- use less) and one diced red pepper, saute until soft, add the chicken back in, and add one can (14.5 oz) of diced tomatoes (add more if you want the sauce to be saucier) and about 1/2 cup of wine, (red or white, whatever you've got on hand) add salt, red pepper flake, black pepper, basil, oregano to taste (in other words, however much you want, some like it spicier than others). I let this simmer for approximately 20-25 minutes and serve over pasta (whatever you've got handy, farfalle or bowtie pasta works quite well I've found)
The important thing is to taste and season based on this, recipe is very versatile, don't be afraid to use whatever fresh, dried herbs you have on hand or even other vegetables.

Lemon-Pepper Chicken
2 Chicken Breasts, halved
1/2 cup Worcestershire
1/2 cup Lemon Juice
1/2 cup Water
2-3 tbs. Lemon-Pepper Seasoning
Salt and Pepper to taste
1 lg Onion, sliced
Parsley
Place chicken breasts in dish, top with onion rings. Combine lemon juice, Worcestershire sauce and water. Pour over chicken and onions. Sprinkle parsley and lemon-pepper seasoning over all. Cover and bake at 350 degrees for 1 hour.
Deviled Chicken
Melt: 1/2 stick Margarine
Add: 1/4 cup Lemon Juice
2 tbs. Worcestershire Sauce
2 tbs. Heinz 57 Sauce
2 tbs. Mustard
1/2 tsp. Pepper
Salt Chicken, dip in sauce to coat. Place in ovenproof dish. Pour remaining sauce over chicken. Bake at 325 degrees for 1 hour.
Chicken and Rice
1 pg. Mahatma Yellow Rice
2 Chicken Breasts, deboned and cut up
2 Chicken Bullion Cubes
1 tsp. Salt
Dash Pepper
2 tbs. Margarine
Cook chicken in pot that has water, bullion cubes, salt, pepper and margarine. When tender, add yellow rice and simmer 20-25 minutes.
VARIATION: Use Rice-A-Roni instead of yellow rice. Just sauté the Rice-A-Roni in the butter and add this to the chicken mixture and cook till done.
Chicken and Rice Casserole
1 can Cream of Mushroom Soup
1 can Mushroom Stems and Pieces
1 soup can Milk
1 envelope Onion Soup Mix
3/4 cup uncooked regular Rice
2 Chicken Breasts, halved
Mix soup and milk; reserve 1/2 cup of mixture. Mix remaining soup mixture, rice, mushrooms (with liquid) and 1/2 the onion soup mix. Pour into ungreased baking dish. Place chicken breasts on top. Pour reserve soup mixture over chicken; sprinkle with remaining onion soup mix. Cover with aluminum foil and bake 1 hour. Uncover and bake 15 minutes more.

boil 3 cuts of chicken breast for an hour... then make it into strips, fry until golden brown, set aside.
for dips: slice some tomatoes into strips, put some lemon, add some salt and soy sauce.
*this is good with soft drinks or beer
another is: boil 4 cuts of chicken breast for 1 and half hour... drain... slice some onions into circles, slice some ginger into strips, and slice some garlic into stips.
fry garlic and onions, then add 1 cup water, add the 4 cuts chicken breast, add tomato sauce for thickening... add salt if needed, serve hot.

White Wine Chicken ...we made this in culinary school... Saute chopped onions, celery, and carrots in oil in a frying pan.. Add chicken broth and white wine...and put chicken cutlets over the mixture.. put lid on and simmer till chicken is done.. serve with mashed potatoes, red potatoes, rice, or pasta

My favorite!!
Marinate in Kens Steak House Lite Caesar dressing.
Bake at 350 with the marinate. Toss in a few fresh mushrooms and cook a little pasta.
Enjoy.
