If you have a bundt cake pan or angel food cake pan, you can make a catepillar cake. Choose whatever flavor box cake mix you like, and bake all the batter in the large pan- as opposed to two layers. After the cake cools, you cut it straight across and shift the top over to make an "s" shape. A large bakery style/size cupcake or muffin can make the head, held on with toothpicks. Cover the whole thing with what ever flavor icing you want. For decorations, you can let go wild. I used mini M&M's for spots, and the tube gel for crazy strips. Cherry licorice makes the legs and antennae. Cut a marshmallow in half and stick an M&M in the center for eyes, secure with toothpick if needed. Licorice can also make the smile. I've made this cake when all mine were 3-4 and they got a big kick out of it. I usually use plain vanilla frosting and tint it green with food color, and make a chocolate cake. It makes all the bright candies sort of pop out at you, and the kids loved it. You can decorate it as wild or mild as you want, depending on the candies you use to decorate it. I usually use a numerical candle, but you could always poke the little individual ones in where ever you like. It's fairly simple to pull off this cake, and you'd be surprised how many people will ask how you got the s shape.

This is a fun one. You can start with a basic cake mix with a couple of minor changes. If you go for chocolate, use buttermilk instead of the water(same amount), use melted butter/margarine instead of the oil(again, same amount). ADD 2 -3 tablespoons of cocoa powder. Bake as usual.
If you use either a white or yellow cake mix(or any other flavor), use regular milk and melted butter. You can add a teaspoon or 2 of an extract to enhance the flavor.
Ice with a can of the store bought icing. No one will ever know anyways.
Decorate with decorations you can find at most party stores, craft stores, sometimes even walmart in the craft department. Wilton has a great selection of things made just for that.
Make it colorful and fun.

My mother did this for me when I was in my 20's which is kind of embarrassing, but a 3 year old might like it.
She got a loaf pound cake and tried to make it look like a train engine. She frosted it with chocolate frosting and used doughnuts for the wheels. I think mini doughnuts would work. She got a can of decorating frosting that comes with decorating tips and drew some details on the engine. It was cute.

Well, it depends on the flavor she would like, but usually kids like simple things, so maybe just a vanilla cake with a cream frosting. Then decorate it with her favorite things, like a character theme, or something. Maybe Dora the Explorer? And use some candy pieces for decoration. . .

Well, it turns out that someone posted a recipe for a chocolate mayonaisse cake in another thread!
here is the recipe although it looks simpler than the one I remember. I'll keep looking for the other one if this one does not melt in my mouth. ;)

1 cup mayo. or miracle whip
1 cup sugar
2 cups flour
dash of salt
1/2 cup cocoa
1 tsp B. soda

1 cup cold water

Mix all together, Bake 25-30 min
2-8" pan or large pan.
