You will want to make sure is no other bits of the seed head stored with the seeds and that they are totally dry before you store them in a cool dark dry location. Some people put them in an air tight container - but risk there being some moisture still in the seeds and thus causing mold. Others, like already mentioned, use an envelope.
Most important thing is that they are dry before you store them.

Just let them dry and put in an envelope labeled Sunflowers. Every year some of my sunflowers reseed themselves and just pop up where they want. Don't you just love them?

I keep mine in a manila envelope. Closed,but not sealed.

i agree, but it gets a bit annoying since it sometimes pops up where i don't want it to, but yeah, agree
