Chocolate fudge brownies
Serving size: Serves 10 or more
Cooking time: Less than 60 minutes
INGREDIENTS
90g dairy free spread (or butter), melted
330g (1½ cups) caster sugar
50g (½ cup) cocoa
110g (¾ cup) plain flour
75g (½ cup) self-raising flour
3 eggs, beaten lightly
METHOD
Pre-heat the oven to moderate (180°C). Grease a 19cm x 29cm rectangular slice pan and line the base and two opposite sides with baking paper.
Combine the butter and sugar in a medium bowl. Stir in the sifted cocoa and flour then eggs. Spread the mixture into the prepared pan and bake in a moderate oven for about 30 minutes or until firm, covering the top loosely with foil if it is over-browning. Cool in the pan then cut into 16 pieces. Dust with icing sugar, if desired.

Ingredients (use vegan versions):

1 cup spelt flour
1/2 cup oat flour
1/2 teaspoon baking powder
1/3 cup unsweetened cocoa powder
pinch of salt, optional
3 tablespoon oil
3/4 cup sugar
2 eggs (2 eggs = 1/3 cup pureed soft silken tofu, bananas or applesauce)
1/4 cup strong coffee or water
1/3 cup vegan chocolate chips, optional
1/3 cup chopped nuts, optional

Directions:

Preheat oven to 350F. Sift dry ingredients together. Lightly grease pan and flour with a bit of the sifted dry ingredients.

In a separate bowl, whisk together oil and vegan sugar. Stir in eggs and then coffee/water.

Pour wet ingredients into dry ingredients and combine until just mixed.

Fold in chocolate chips and/or chopped nuts, if desired. (You can reserve some and sprinkle them on the top before baking.)

Pour into pan, spread batter evenly and bake in preheated oven for 15-20 min or until center springs back to touch. For super moist brownies, take out closer to 15 min and let brownies set.

Serves: makes 12

Preparation time: 18 minutes plus baking time

Dairy Free Browines! Yummmmm! Says my kids!

1 1/2 cups soft whole-wheat flour
2/3 cup cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
2 cups sugar
1/2 cup vegetable oil
2/3 cup soy milk or rice milk
2 teaspoons vanilla extract
1 extra large egg
2 tablespoons brown rice syrup




1. Preheat the oven to 350°F.
2. Grease and flour a 9"x13" pan; or, better, line it with parchment paper.
3. Sift together the flour, cocoa, sugar, baking powder and salt.
4. Whisk together the oil, soy milk, vanilla, egg and brown rice syrup.
5. Stir into the dry ingredients.
6. Scrape into the pan.
7. Bake for 25 minutes.
8. Cool in the pan, cut into squares, and remove.
