Ingedients:-

-2 16 oz. cans sliced peaches in syrup
-1/2 cup sugar
-2 tablespoons butter
-2 tablespoons flour
-1/4 teaspoon ground nutmeg
-1 tablespoon fresh lemon juice
-2 pie crusts (top and bottom)
-cinnamon sugar

Method:-

1) Preheat oven to 400°F degrees.
2) Drain peaches, reserving 1/3 cup syrup.
3) In a saucepan, mix together sugar, flour, nutmeg and a pinch of salt.
4) Add reserved syrup and cook, stirring constantly, over medium heat until mixture becomes thick and bubbly.
5) Add butter, lemon juice and peaches. Remove from heat and allow to cool.
6)Meanwhile, line a 9 inch pie dish with pie crust; fill.
7) Using a wavy-edged pastry wheel, cut upper pastry crust into lattice strips (optional).
8) Put lattice strips on top of filled pie and dust with cinnamon sugar.
9) Bake at 400°F degrees 40 to 45 minutes until golden brown.
10) Serve with vanilla ice cream topped with peach syrup or garnished simply with a sprig of fresh mint.

This is an EASY fruit pie recipe. Buy a prepared graham cracker (or dough) pie crust . Pour one can of prepared pie filling such as cherry, apple, blueberry, etc., in the shell and put in oven. Use the instructions for cooking the pie which will come with the pie shell. Remove the pie from the oven and let cool just a little. Then add a dollop of Cool Whip or whipped cream to each piece and serve hot or cold.

Fruity Tart

"Cutting up all the fruit takes a bit of time, but the rest is easy as pie. Use any fruit of your liking."

INGREDIENTS:
1 (9 inch) pie crust, baked
1 (4.6 ounce) package non-instant vanilla pudding mix
3 cups milk
1/2 cup fresh strawberries, sliced
1/2 cup fresh blueberries
1 cup fresh peaches, pitted and sliced
1/2 cup fresh raspberries
1 cup kiwi, sliced
1/4 cup any flavor fruit jam

DIRECTIONS:
Combine pudding mix and milk in a medium saucepan. Cook according to package directions. Pour pudding into pastry shell and refrigerate until cool and firm. Arrange fruit on top of pudding layer.
Place jam in a small saucepan over low heat, stirring occasionally until runny. Using a pastry brush, coat fruit with jam. Now hide in the closet and eat the whole thing yourself.

INGREDIENTS

2 1/2 cups peeled, cored and sliced apples
1 teaspoon ground cinnamon
1 teaspoon white sugar
1 cup white sugar
3/4 cup margarine, melted
1/2 cup chopped pecans
1 cup all-purpose flour
1 egg, lightly beaten
1 pinch salt

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan with margarine.

Fill 2/3 of the pan with sliced apples. Sprinkle with cinnamon and 1 teaspoon sugar.

In a medium bowl, mix 1 cup sugar with the melted margarine.

Stir in pecans, flour, egg and salt. Mix well. Spread mixture over the apples.

Bake in preheated oven for 65 minutes, or until golden brown.

INGREDIENTS
3 egg whites
3/4 cup white sugar
1 cup flaked coconut, toasted
1/2 cup toasted and sliced almonds
5 fresh peaches, pitted and sliced
1 cup heavy whipping cream, whipped
1/4 cup flaked coconut, toasted
DIRECTIONS
Beat egg whites until soft peaks form. Gradually add sugar, beating until very stiff and glossy. Fold in toasted coconut and almonds. Spoon into a 9 inch pie plate to form a shell.
Bake at 350 degrees F (175 degrees) for 30 to 35 minutes. Cool.
Fill with sliced peaches. Top with whipped cream and toasted coconut. Chill until ready to serve.

COBBLER....This recipe is one you can use with peaches, apples, blackberries and blueberries.


Melt in large, shallow casserole 1 stick of butter. Make a batter of 1 cup all-purpose flour, 1 cup sugar, 1/2 teaspoon salt, 3 teaspoons baking powder(3 tsp=1 tblsp), scant cup of milk. Pour batter over butter in casserole. DO NOT STIR. Place on top of batter 2 cups Georgia Peaches, cut up and sweetened with 1 cup sugar. DO NOT MIX OR STIR. Bake 1 hour at 350 degrees F.

Variations

I add cinnamon and vanilla extract to batter depending on what kind of fruit I am using.

SWEET POTATO COBBLER VARIATION
I add the cinnamon and vanilla to the batter. I bake fresh sweet potatos until they are done. When cooled I peel them and dice them up, I add brown sugar, cinnamon, vanilla extract, allspice and ginger powder to them, I just put potatos and spices and such in a large bowl with a lid and gently turned it to mix it all together. Then of course just spread it on top of the batter in the casserole dish. A couple of variations to this I have thought about but not tried yet might be to add nuts and/or raisins. But is it great just like it is.

CARAMEL APPLE CREAM PIE

1 9" Pastry shell
1/4 cup butter
1/2 cup Packed brown sugar
4 med. Tart apples, peeled and cut into 1/2 inch chunks
1-1/2 tsp. Pumpkin pie spice-divided
1 to 2 tbsp. All-purpose flour
1/2 cup Caramel ice cream topping
1/2 cup Chopped pecans
1 pkg.(8oz.) Cream cheese, softened
1/4 cup Sugar
1 Egg
1 tbsp. Lemon juice
1 tsp. Vanilla extract
Whipped topping

Bake pastry shell but do not prick. Cool. In a large skillet over medium heat, melt butter and brown sugar. Stir in apples and 1 tsp. pumpkin pie spice. Simmer for 12-15 min., stirring frequently or until tender.
Stir in flour. Cook and stir for 1 min. Drizzle caramel topping over pastry shell. Sprinkle with pecans. Spoon apple mixture over pecans and set aside. In a mixing bowl, combine cream cheese, sugar, egg, lemon juice and vanilla. Beat until smooth. Pour over apples.

Bake at 350' for 35-45 min. or until a knife inserted into the cream cheese layer comes out clean. Cool on a wire rack. Chill completely. To serve, top with whipped topping. Sprinkle with remainder of pumpkin pie spice.
