The ancient Egyptians were very spiritual and believed in an afterlife. They also had enough medical knowledge to preserve bodies for the afterlife, but they knew enough to remove the internal organs and keep them in canopic jars so they would be ready for their next life. I don't know the exact reason for the different designs, it may have to do with their station in life, if they were royalty or commoner.

Hold the organs that were "vital" The jars were decorated to specify a specific organ I believe

They were created to hold the internal organs of a mummy. By trial and error, Egyptians had learned that some organs just didn't mummify well unless they were removed.
