Leek and Potato Soup
1 bunch leeks, white part only, cleaned and chopped
2 potatoes, peeled and diced
1 cup strong broth of your choice (or stock cubes)
1 litre milk
Salt and pepper
Place veg in a pot and add liquids. Bring to a boil, reduce heat and simmer until potatoes are soft (about 20 min.). Blend until smooth.
You can also leave the soup unblended, and use all stock instead of adding milk.

Leek Omelet
1 leek, white part only, cleaned and finely chopped
2-3 eggs, beaten
Dried dill
Salt and pepper.
Sauté leek in a small amount of olive oil until it starts to colour. Add leek to beaten egg, mix well, and pour into frying pan. Season. Cook until omelet is set; turn and finish cooking.

Cheese and leek quiche. Buy ready made shortcrust pastry, roll out to fit a quiche dish and bake it empty for about 10 minutes to stop the bottom going soggy. Fry leek in butter with a finely chopped onion and make up a packet of cheese sauce. Fill quiche case with leek mixture, cover with cheese sauce and bake until golden - absolutely gorgeous, and you can eat it hot or cold

For quickness, par boil the leek and then put it in an oven dish, while the leek is par boiling add some pancetta and garlic to a separate pan with a smidge of olive oil, when the pancetta is crispy add it on top of the leek then add loads of chedder chease and bake in oven for around 20 - 30 mins depending on gas/leccy heat (personally hate leccy) its bubbles and melts and enjoy

Serve with a green salad, yum!!!

Lots but a real quick and easy one would be:
Fry garlic and chopped onion in butter or oil (or combination of the two) until softened. Add sliced leek and continue to cook until softened. Meanwhile, put a pot of pasta on to boil (tagliatelle is good but any will be ok). Once pasta cooked, drain. Add a good glug of cream and black pepper to the leek, mix together and add to the pasta. Serve with grated parmesan on the top.
Voila.

Chop leeks up and place in a shallow dish with cream, salt, pepper and top with grated parmesan cheese. Bake in the oven for about 20-30 minutes. Delicious!

Bake a potato in the oven. When it is cooked scoop out the insides and mash. Mix it with grated cheese, cooked pieces of bacon, and steamed leeks. Mix together, put back into potato skins and bake in oven for 10 minutes.

Try this French recipe:

Poached Leeks

INGREDIENTS:
•2 carrots, cut into chunks
•2 celery stalks, cut into chunks
•2-4 sprigs fresh thyme
•1 bay leaf
•parsley sprigs
•1 Tablespoon black peppercorns
•2 lbs. leeks (about 8 small, slender leeks)dark green tops cut off and cleaned**

Vinaigrette:

Make this from:
1 Tablespoon red wine vinegar
2 Tablespoons fresh lemon juice
3 Tablespoons olive oil
2 small shallots, very thinly sliced
2 Tablespoons pink peppercorns, slightly crushed
freshly ground pepper
1/2 cup flat leaf parsley, finely chopped

Whisk all the vinaigrette ingredients together and allow to stand.



LEEKS:

1. Fill a large saucepan with water and add the carrots, celery, thyme, parsley, bay leaf and black peppercorns.

2. Brink to a boil, reduce heat and simmer about 30 minutes.

3. Return liquid to boil and add leeks.

4. Cook until tender, about 5-10 minutes. Remove leeks from the liquid and drain well.
To serve:
Toss the leeks with vinaigrette and arrange them on a serving platter.

**To clean leeks: Slice them in half lengthwise, leaving a little attached at the root end to hold them together. Soak them in cold water until free of sand.

Wrap young leeks in ham if you are not vegetarian, then place in a buttered gratin dish, cover with a cheese sauce and top with grated cheese & finely chopped spring onions, bake till tender and serve with crusty warm bread rolls.

Roast it - slice open, trim off ends, drizzle with Olive oil, season and roast in the oven. Slow and low for tender leek, or quick and high for crunchy

yes leek and potato soup just boil potatoes till soft then put leaks in and boil for a further 10 mins then liquidise add small amout of milk and there you have it, its lovely with a chunk of crusty bread ooooh think i must go and make sum now!!!!!!
