Also, why are restored prairie areas not considered genuine where as untouched prairie is treasured?

Root systems of prairie plants are very deep. Most are 2X the height of the aboveground stems in length or more. They are important for the obvious reason of water and nutrient uptake as well as for the regrowth after prairie fires. Most prairie plants growing points (meristems) are located in the roots underground to protect them from the occasional fire. So the whole plant isn't consumed by the fire, and when the fire is over the plant can grow back from the roots.

Untouched prairie is treasured because we have so little of it left. Restored prairie isn't as good as untouched prairie reminents because as much as man likes to he cannot play God, any ecosystem is unlikely to be completely replicated by man. Although this isn't to say that we can't still get some of the benefits of an untouched prairie in a restored one, restoring prairies is still a worthwhile effort. It's the same reason that virgin women are treasured in many cultures. It's just the way that God made it.

Roots are important for two reasons the reasons why they are paries in the first place. Fire, grazers and also helps with drought. A untouched prairie has the same soil struture when the glacier left about 10,000 years ago. A prarie that has been farmed or built has lost that soil struture. Also bacteria, fungus etc. would be changed also.

Most prairie plants have extensive root systems to maximize water uptake during drought and for carbohydrate storage to enable regrowth after winter or a fire.
