The 3 wise men come about from the song. In the Bible, it mentioned men coming from the East and did not mention the number. I'm guessing the writer of the song selected 3 because the East represented 3 different nationalities.
But 3 wise men is not Biblically based. There were men that visited The Christ Child and that was after he was 2 years of age, not at the stable.

First where does it say there were only Three. Second Wise Men was a term for people from the east who had studied the stars and the prophesise and worked out when and where Christ would be Born. The title was given by those who are telling the story because of how they looked and talked.

They were called in Greek "Magi" from which we get the word "magic." They were astrologers, but in Chaldea they were considered the "wise men."
You may wish to consider the Bible book of Daniel in this regard.
By the way, why do you think there were three of them? The Bible does not indicate how many, other than the fact there was more than one.

Strange that astrology is condemned in the Bible (Isaiah 47:13) yet the recognition of the Christ child by these priestly astrologers (magi) from the east is included in the Christian scriptures as an apparent sign of the infant Jesus's importance.

The Bible calls them "magi" (Greek) in Matthew 2:1. From the information we are given, we have no idea how they referred to themselves. They might have called themselves anything, from Methodists to Browncoats; we just don't know.
We also don't know how many of them there were. The number 3 comes because of the 3 gifts mentioned: gold, frankincense, and myrrh. However, it's possible that several "magi" brought gold, or that one brought both gold and myrrh. We do know that there were at least two, because they are referred to in the plural.
