Simply sweat a shallot in some butter, add a small garlic clove - squeezed. Cook, pot covered, to soften rather than fry.

Pour in a small carton of italian "passata", or pureed canned tomatoes, simmer about 10 minutes.

Add a few cubes of chilled butter, and beat to dissolve. Add a few basil leaves and turn off heat. let rest a few minutes.

Add kosher salt and a little white pepper, and taste.

Serve with a swirl of heavy cream on top, OR a tablespoon of Sherry.

Get a can of Cambells Tomato soup. Add half and half instead of water. Also, add some diced tomato's to give it some body. Tastes great and is "very" easy to fix!!!!!!

EASY TOMATO SOUP

Amount Measure Ingredient -- Preparation Method

2 md Onions, coarsely chopped
2 tb Olive oil
1 1/2 lb Potatoes, diced
2 ts Oregano
1 t Basil
2 ts Parsley
1 t Salt
2 ts Black pepper
28 oz Can tomatoes
7 c Stock

Heat oil in large soup pot. When hot, saute onion for
5 minutes, take care not to let it brown. Add
potatoes and fry for, covered for 3 minutes. Add
oregano, basil, parsley, salt & pepper. Cook covered
for 2 minutes. Add tomatoes and cook for another 5
minutes. Add the stock, bring to a boil, reduce heat
& simmer for 20 minutes, or until the potatoes are
tender. Check seasonings. Let cool, blend till
smooth. Reheat before serving, but take care not to
let it boil.

This is a quick and easy soup to make with canned tomatoes and milk, but sauteed chopped onion and celery give it a homemade touch.
INGREDIENTS:
4 tablespoons butter
1/4 cup chopped onion
1/4 cup chopped celery
3 tablespoons all-purpose flour
3 cups milk
2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon (scant) ground black pepper
2 cans (14.5 ounces each) diced tomatoes, undrained
chopped basil leaves or fresh grated Parmesan, optional
PREPARATION:
In a large saucepan, heat butter over medium-low heat. Add chopped onion and celery; cook, stirring, until tender. Stir flour into the vegetable mixture, stirring until well incorporated. Gradually stir in milk and add the sugar, salt, and pepper. Continue to heat, stirring, until the mixture thickens and begins to boil.
Dice tomatoes smaller or puree in a blender or processor, if desired. Heat tomatoes in a separate saucepan then gradually add them to the first mixture, stirring constantly. If desired, garnish with freshly grated Parmesan cheese or fresh chopped basil leaves.
Serves 6.

Open a can of Campbell's tomato soup, put in pan, but use milk instead of water. Easy and can't be beat.
