I am making a birthday dinner for my mom and I don't know what to make. I want to do something not too hard but creative. I am a pretty good cook, but not very exotic. She isn't big on meat either except for chicken.

Is it possible to talk to her mother and find out her favorite childhood meal? That would bring back memories, and make your grandma feel good.

My grandma made this dish with spaghetti, spaghetti sauce, diced cooked chicken, topped with cheese and green olives. I still love it to this day. Just combine everything, top it with the cheese and olives and bake!

Try a grilled chicken salad. Fresh greens, cheese, grilled chicken, onions, tomatos, cucumber, croutons, Ranch dressing, Mmmmm, cant lose with that! Add your own touch..... PERFECT. She'll love it! ................... dont forget dessert.
