Brownies with vanilla ice cream is one of my favorite desserts. In fact, my family had this for dessert last night and Sat night!
However, one variation I like is to make instead of Brownies is Chocolate Lava Cakes. They are similar to brownies, yet they have a chocolate sauce inside of them that is absolutely divine. You wouldn’t need to buy extra chocolate sauce because it’ll already be in the cakes!
It’s a one-bowl mix and they are extremely easy - if you can make a box of brownies then you can make home-made lava cakes! You can even make the mix a day ahead of time and then just pop them into the oven 15 minutes prior to serving. Although they are easy to make, guests often think you labored all day over them because they are so elegant!
Here is the recipe, but if you don’t want to print this you can get it right off the box of Baker’s brand Bittersweet Baking Chocolate Squares, which you will need to make the lava cakes!
You’ll need six ramekins (or you can use 6 charlottes, mini-bundt pans, custard cups, or oven-safe dessert cups – a Texas-style muffin pan would probably even work in a pinch, although the cakes won’t turn out as pretty.) Spray lightly with non-stick spray and set aside.
Ingredients:
Six squares of bittersweet baking chocolate
10 Tbsp. butter
1 ½ C Powdered Sugar
½ C Flour
3 whole eggs
3 egg yolks (Use the egg whites for tomorrow’s breakfast!)
Microwave the butter and chocolate in a bowl for one minute. Stir and microwave for 30 more seconds. Continue to stir the butter and chocolate until the chocolate is completely melted, but do not microwave any more or your chocolate will burn (eww, yuck!)
Stir in the powdered sugar and flour and mix well. Add the eggs and egg yolks and mix well. Pour into the prepared ramekins.
At this point you can either bake them or cover with plastic wrap and store in the refrigerator (up to 24 hours) to bake at a later time. **Important – you don’t want to put a cold dish into a hot oven or the glass will burst! Take the prepared ramekins out of the refrigerator for about 15-20 minutes prior to baking** For easy handling, place the 6 ramekins on a cookie sheet for transferring in and out of the oven.
Make sure you bake right before you eat them. You’ll want to serve them hot and they usually cannot be re-heated, otherwise you won’t have any sauce.
Once baked, run a knife around ege of ramekin to loosen the cake and invert onto a dessert plate. Delicious served with a scoop of Breyer’s of Haagen Dazs Vanilla ice cream! (The ice cream will melt a little bit and the cake acts as a sponge, soaking up the ice cream. Mmmm!)

Warm brownie and vanilla ice cream, choc sauce on top... always a winning combination.
If you want to tart it up somewhat, think of anything that would compliment your dessert:
A dollop of marshmallow fluff under the hot brownie.
A few drops of coffee, or orange liqueur on the brownie.
Spread Nutella over the brownie.
Chopped hazelnuts over the ice cream.
A dusting of bitter cocoa powder over the choc sauce.
Flaked almonds.

Nuts, pretty colored jimmy's, strawberries, bananas, a cherry, or cookie crumbs might be good too. Pretty much anything you could put on ice cream, you can put on this dish that you are planning on making. It sounds like it is going to be good! I think the best advice is to just have fun with it!!!

You can always add some whipped cream and a cherry and make it a brownie sundae. I have done this before and it is excellent.
