I have used this recipe plenty since I saw it on Rachel Ray's 30 minute meals. I have also given it out to many others who were just as pleased as I was.
Spaghetti and Meatball Stoup-
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 carrot, peeled and chopped into a small dice
1 medium yellow skinned onion, chopped
2 small ribs celery from the heart, chopped
3 cloves garlic, chopped
3 cups tomato sauce or 1 (14-ounce) can plus 1 (8-ounce) can
3 cups chicken stock, available in a box on the soup aisle
1 pound ground beef, pork and veal mix (meatloaf mix) available at butcher counter
1/2 cup grated cheese, Parmigiano or Romano, plus more to pass at table
1/2 cup Italian bread crumbs, a few handfuls
1 large egg, beaten
2 tablespoons chopped parsley leaves
1/2 pound spaghetti, broken in half
1 cup basil leaves, torn or shredded
1 loaf Italian crusty bread, for dunking
Preheat a medium soup pot over medium heat. Add extra-virgin olive oil, 2 turns of the pan, carrots, onions, celery, garlic and saute 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil.
While soup comes to a boil, mix the ground meat with cheese, bread crumbs, egg and parsley. Roll into 1 1/2 to 2-inch balls.
Remove lid from soup and slide balls into soup. Bring back to a boil then stir in spaghetti. Reduce the heat and simmer soup 10 minutes more, until pasta is tender and balls have cooked through. Stir in basil and remove "stoup" from the stove. Serve soup with bread and cheese

Here's one of my own creations:
Crabby Fettucini-
1 pkg crabmeat, chopped
1 onion, chopped
2 TBS minced garlic
2 shakes garlic powder
4 TBS butter
3 TBS Italian seasoning, more or less to your liking
1 box fettucini
1 can diced tomatoes
Cook fettucini according to package. Meanwhile saute onion and garlic in 2 TBS butter. Add seasonings and butter and stir. Add crabmeat and stir . Add tomatoes. Cook 5 more minutes to blend flavor. Serve over fettucini and sprinkle with grated parmesan.

I got this out of a magazine and has become a favorite around my house:
Basil Caesar Salmon-
4 salmon fillets
1/4 c caesar dressing
pepper
1 c caesar salad croutons, crushed
1/2 c grated parmesan
2 tsp dried basil
2 TBS Olive Oil
Place salmon in greased pan. Spoon the salad dressing over fillets; sprinkle with pepper. Combine croutons, parmesan and basil. Sprinkle over fillets and gently press into dressing. Drizzle with Oil. Bake uncovered at 350 for 15-20 min.
Quick and yummy. Have fun!

Quick pasta
8 oz. spaghetti, uncooked
2 cups frozen peas
3 slices OSCAR MAYER Bacon
1/4 cup KRAFT Zesty Italian Dressing
4 eggs, lightly beaten
1/4 cup KRAFT 100% Grated Parmesan Cheese
COOK pasta in large saucepan as directed on package, adding peas to the cooking water for the last minute of the pasta cooking time. Meanwhile, cook bacon as directed on package.
DRAIN bacon. Set aside until ready to use.
RETURN pasta mixture to saucepan. Crumble bacon. Add to pasta mixture along with the dressing, eggs and cheese; mix lightly. Cook on low heat 2 to 4 min. or until eggs are cooked through, stirring constantly.
Jazz It Up
Sprinkle with 1/4 cup chopped fresh parsley just before serving.

Any type of fish. I recommend Cod. 20-25 min at 350. Fresh asparagus and some angle hair pasta with butter and Parmesan Cheese.

chicken pan fry
bread and season chicken to liking pan fry in oil till crispy and cooked inside out or even deep fry them for faster cooking like 5 mins per 10 tenders
make some mac and cheese like boil water on high heat and add elbows some salt and cook till soft then drain put back in pan on low heat with cheese as much to ur liking and alittle milk to make it creamy
then open can of peas and microwave for two mins. and ur good

chicken quesadila
1 can diced tomatoes with green chilies
3 boneless skinless chicken breasts
1 small onion
1 small pkg of mexi mix cheese
1 pkg flour tortillas
coat skillet with nonstick cooking spray
dice up chicken breasts and onion throw in skillet with can of tomatoes
cook over high heat until all liquid evaporates and chicken is no longer pink in middle.
move that mixture into a bowl- wipe out skillet- re-coat with cooking spray reheat skillet
place chicken mixture on 1/2 of tortilla sprinkle with cheese
fold over and fry in skillet for 2 minutes each or so until each side of tortilla is lightly browned and cheese is melted
serve with sour cream and salsa
not only can I have it cooked in under 30 min- with just one skillet, bowl and a cutting board to wash I can have it cleaned up too.

i wont go into recipes, but please check out kraft.com or campbells.com. they are so good at a bunch of 30 min. meals of all types. i go to those sites often, look also at your campbells soup cans, always have recipes on them.
