You can use disk utility to create an image of your hardrive or selected folders and then burn them to CD/DVD. It's part of the Mac OS X utilities. I use it to clone my hard drive, rather than backing up to DVD.

Other options are Norton Utilities (Symantec), Toast 7 Titanium from Roxio.

DVDBackup - it rips the content and will size it to any size you choose, so you can burn a backup DVD, a backup CD or simply make it an easy size to store on an external back up drive. I don't havethe download url, but run a search and you will find it. Alternatively use 'Handbrake', another great mac ripper. Incidentally, the plural of DVD does not require an apostrophe.
