I need to fill three seperate tiers and would love something original but very yummy to put in between each layer

The easiest would be jams or all-natural fruit spreads. You could also use lemon curd, vanilla custard, or chocolate ganache. It really depends on the flavor of the cake--plain old buttercream can be delicious too.

Any kind of fruit preserves.
Also try whipped topping and a teaspoon or so of instant coffee and a whipped cream stabilizer called Whip IT.
