Traditionally in my family Christmas day is Turkey and the trimings. I put on a real spread.
Christmas eve is a party night for the children to be excited and mingle with incoming family.
We have manwiches, chips, I bust out the home made cookies, pies, nut breads, poppy seed rolls.

My late Mother-in-law started a tradition years ago with a midnight supper (to help get all the kids sleepy we had it late). We did an easy menu you could make ahead and I still do it and my daughter has started doing it as well. We have sloppy joes and potato salad (it always tastes so good in the winter!) and add other things like chips and dip, veggies and dip, fruit salad and chocloate cake along with the usual Christmas baked goods.

To start out with have a nice soup like cream of broccoli or loaded potato soup. Then try Cornish Game Hens Stuffed with herb dressing, green beans w/ almonds(Delicious),garlic herb Asparagus, Beef Marsala(that's a creamy brown sauce, made with mushrooms, onions, heavy cream and Marsala Wine Sauce), Mash Potatoes, some type of bread ( ranch style yeast rolls or sweet potatoes biscuits) For desserts try an apple pie with Cheddar cheese in the crust or a very nice bananas pudding, it's the best.

I've made this on 2 special occasions and everybody loved it. Actually they were mad I didn't make 2...
Green Bean Mushroom Pie-
3 c sliced fresh mushrooms
4 TBS butter, divided
2 1/2 c onion, chopped
6 c green beans, cut fresh
2 tsp minced fresh thyme
1/2 tsp salt
1/4 tsp pepper
1 pkg cream cheese, cubed
1/2 c milk
Saute mushrooms in 1 TBS butter. Drain, set aside. In a small skillet with the rest of the butter, saute onions and beans 18-20 min until crisp-tender. Add all remaining ingredients, included mushrooms. Cook and stir until cheese is melted. Remove from heat and set aside.
Make dough:
2 1/2 c flour
2 tsp baking powder
1 tsp dill weed
1/4 tsp salt
1 c cold butter
1 c (8oz) sour cream
1 egg
1 TBS whipping cream
In a bowl combine first 4 ingredients. Cut in butter until mixture
resembles coarse crumbs. Stir in sour cream to form a soft dough. Divide in half, Roll out 1/2 on well floured surface to fit a deep dish 9 inch pie pan and trim edge.
Pour green bean mixture onto crust. Roll out other half. Make a lattice crust. Trim, seal, and flute edges. Beat egg and cream together. Brush over top. Bake 400 for 25-35 min. or until golden brown.
(you can use your own dough, but the flavors in this one really adds to the rest of the pie)
mmmmmmm.

Tamales are traditional in (I think) Mexico; our Southern California variation is Tamal Pie. Nice and simple, and a lot less food since you'll have leftovers from Christmas anyway.
I've also made lasagna or split pea soup with ham. My friend's family in Australia always has a "Christmas curry." Make something unexpected.
