Favorite has to be cucumber salad. Thin slices of cucumbers and thin slices of onion, combined with sour cream, fresh ground pepper, and a little dill. Refrigerate at least 4 hours and then stir. In that time the cukes will have 'wept' out some water and that's good because it naturally thins out the sour cream. You may substitute yogurt instead of sour cream. Will last for several days. And the taste is truly refreshing!!!!

my favorite way is cucumber salad with onions and vinegar. You slice the cucumbers up and add sliced onions and vinegar let sit in the fridge for at least 1 hour so the vinegar has a chance to soak into the cucumbers

I like using them in my own salad which I call 'Chef's Salad' as I'm the chef. Here's the recipe

Ingredients (use volumes depending on taste and which you like best)

Lettuce leaves torn into small pieces
Slice of white cabbage across grain then chopped into small pieces
Slices of cucumber about 1/2 inch thick then cut across 3 times then the other way to make 9 pieces. Use as many slices as you like.
Small tomatoes cut into 4 then each piece into 3 (or cherry tomatoes cut in half)
Chopped green and red peppers, again into small pieces.
Small onion chopped finely or sliced spring onions including green bits.
Chopped mixed herbs
Rasher of unsmoked back bacon chopped into 1/2 inch squares and fried until crispy.
Slice of bread cut into small cubes and fried until crispy.
Cheddar cheese cut into 1/4 inch cubes.
Salad dressing made of olive oil, balsamic vinegar in equal amounts with dash of mustard powder well blended.

Method.

Basically toss all ingredients together and serve in bowls drizzled with the dressing. Chill in refrigerator first for 30 minutes. I like to serve this as a starter but can be main meal just by serving larger portions. If main meal serve with buttered crusty roll or French stick.

Diced cukes mixed w yogurt cheese, dill, salt & pepper. Great on pita bread with lamb & tomatoes - or a side dish for schwarma.

Tea sandwiches - thinly sliced cukes on buttered bread w a sprig of dill or watercress.

Appetizers - slice cukes horizontally in 2" heights, scoop out a little of each slice and fill with crab, salmon or shrimp mousse.

Chilled cucumber soup

BLT Cukes
Makes 8 to 10 slices

3 slices crisp cooked bacon, chopped
1/4 cup diced tomato
1/2 cup finely chopped lettuce and baby spinach
1-1/2 tablespoons nonfat mayonnaise
Pinch salt
1/4 teaspoon black pepper
1 large cucumber
Minced parsley or green onion

Combine bacon, tomato and greens with mayonnaise. Season with pepper; set aside. Peel cucumber. Trim off ends, and slice in half lengthwise. Use a spoon to scoop out seeds; discard. Place cucumber in a glass dish. Divide BLT mixture between segments, mounding in hollowed areas. Sprinkle with minced parsley or green onion, if desired. Slice into 2-inch pieces.

Cucumber Salad (Spago?)
Serving Size : 4
Wolfgang Puck

2 cups thinly sliced Japanese cucumbers*
1 teaspoon salt
1 tablespoon sugar
1 tablespoon soy sauce
1/4 cup rice wine vinegar
1 teaspoon sesame oil
2 teaspoons sesame seeds

* English cucumbers may be substituted. The English cucumbers need to be peeled, cut lengthwise, seeded, and sliced into thin half moons.

In a large bowl, combine cucumbers and salt; mix well. Add sugar, soy sauce, rice wine vinegar, and sesame oil; mix well. Sprinkle with sesame seed and mix. Let marinate for 20 minutes before serving. To serve, divide salad among individual chilled plates.

I love sliced cucumbers with sliced onion soaked in vinegar. Adding tomatoes makes it good too.

As sticks dipped into houmous.
Or make some buttered toast, spread some houmous on top then add slices of cucumber, yummy!

1. ice cold sliced cucumbers then sprinkle cavendar's greek seasoning on them
2. sliced cucumber, tomato's, and purple onion with either red wine dressing or Italian dressing.
3. sliced cucumbers with ham slices and Parmesan cheese to top
4. iceberg lettuce salad with sliced cucumbers, purple onion, and black olives topped with blue cheese dressing and croutons
5. sliced cucumbers sprinkled with a little salt and pepper

I put tomatoes. onions, and cucumbers in ranch dressing andf season them. put it in the fridge for a bit then eat. It is like a summer salad. Yum

I like them sliced with sliced onions and tomatoes in italian dressing. Let it sit in the fridge a couple of hours and then eat with crackers!

I eat them with dips all the time as crudite.

It's also good to marinate them with some sliced red onions in a vinaigrette and serve them as a side salad.
