When we eat Ice Cream too quickly and we get a cold head ache it's the response of the Trigeminal Nerve which responds to the cold The Trigeminal nerve is responsible for sensations we experience in our face. This nerve has three branches that meet at a root located near the back of our mouth which connects to the brain. When we eat ice cream the nerve is cooled it produces brain freeze. To stop the feeling or speed recovery up it's best to take deep breaths through your nose which will help warm the nerve and end the associated pain.

Brain freeze, ice cream headache, freezie, or Frozen Brain Syndrome are terms used to describe a form of cranial pain or headache which people are known to sometimes experience after consuming cold beverages or foods such as ice cream, often as a result of rapid consumption.
Mechanism/cause
The reaction can be sometimes triggered within a few seconds after a very cold substance consumed comes into contact with the roof of the mouth. This activates nerves in the region (sphenopalatine ganglia), causing the blood vessels in the brain to dilate. When vessels in the brain dilate, a common effect is an acute headache.

Ice cream is so cold that it finds any sensitivity you may have in your teeth. When it finds that, it hits the nerves in whichever tooth you have a problem with. This transmits to the brain and causes a headache.

Well dear - its all down to the constriction of the tiny blood vessels in your head - the cold makes them constrict and the force of blood going through the now narrowed space is felt as slight pain.
Bit like a hangover dear!

A lot of people suffer from this. It is called "brain freeze", and shouldnt last long. My son gets it, but it doesnt stop him from eating ice cream.

my kids call it brain freeze its worse when you gulp down too much slush it really hurts.....due to the cold hitting nerve ending i think...
