Peanut Butter Balls

Prep Time: 20 minutes
Inactive Prep Time: 20 minutes
Yield: 18 to 24 pieces
1 cup peanut butter
1 cup honey
2 cups powdered milk
1 1/2 cups crushed cornflakes
1 1/2 cups finely chopped walnuts or pecans
1 cup powdered sugar
Mix peanut butter, honey, and milk together in a large bowl to form very thick mixture. Roll mixture in small balls about the size of a walnut. Roll the balls in either the crushed cornflakes, finely chopped nuts, or powdered sugar. Place on waxed paper and refrigerate for 20 minutes.

This recipe is great. I use it every Christmas.
You'll need:
1 cup peanut butter
1 pound confectioner's sugar
2/3 cup butter, softened
1 teaspoon vanilla
2 teaspoons shortening
2 ounces semisweet chocolate
What to do:
1. Cover a cookie sheet with waxed paper
2. Mix together peanut butter, sugar, butter and vanilla
3. Chill in refrigerator for at least 2 hours
4. Roll into 1-inch balls
5. Melt shortening and chocolate in microwave on high for 30 seconds or until melted
6. Dip each ball in chocolate mixture and put in refrigerator. Makes 50 balls.
***NOTE***
You can substitute the semisweet chocolate and shortening for the chocolate almond bark. It works the same and actually hardens quicker.

Peanut Butter Cake
Ingredients :
1/2 cup flour
1/2 cup brown sugar, packed
1/4 cup peanut butter
3 tablespoons butter
2 cup flour
1 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1/2 cup peanut butter
2 eggs
1/4 cup butter, softened
Method :
1-Preheat oven to 375 degrees.
2-Topping: In a small bowl, stir together the first 4 ingredients. Use a pasty blender until the mixture resembles coarse crumbs; set aside.
3-In a large bowl, mix together remaining flour, brown sugar, salt, baking powder and soda. Add milk, eggs and remaining peanut butter and butter. Beat with an electric mixer on medium for 3 minutes.
4-Spoon batter evenly into greased 13x9 baking pan. Sprinkle with topping. Bake for 30 minutes or until tester comes out clean. Cool on wire rack.

I hope I can help you. This is a recipe for fudge, but I have often though of using it to make peanut butter balls myself. It's a very easy recipe and I have been using it for years. I would make the recipe as directed but instead of putting it into the pan and cooling it I would roll the mix into balls and let them cool a little so the chocolate will stick to them. Roll them in melted chocolate and put on a wax paper lined tray in the fridge until set. I think I'm going to do this for the holidays myself. Good luck!!!
Peanut Butter Fudge
Recipe courtesy Alton Brown
1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon pure vanilla extract
1 pound confectioners’ sugar
Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and confectioners’ sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

Buckeyes
INGREDIENTS
1 1/2 cups creamy peanut butter
1/2 cup butter, softened
1 teaspoon vanilla extract
2 1/2 cups semisweet chocolate chips
2 tablespoons shortening
4 cups confectioners' sugar
DIRECTIONS
You'll need wax paper, a double boiler, a cookie pan, and a medium bowl. In the medium size bowl, mix peanut butter, butter, vanilla, and confectioners' sugar (mixture will be stiff).
Shape into balls and place on a pan covered with wax paper. Place into the refrigerator.
In double boiler, melt chocolate and shortening. Pour into bowl and dip balls with chocolate. Refrigerate for thirty minutes until chocolate is firm.

I make them every year but have also lost the recipe. I use a stick of butter, a box of powdered sugar and I believe a cup of peanut butter (add more if needed), you can also add a tsp. of vanilla for flavoring. I just mix well, roll into balls, put in fridge the dip in chocolate. I know its not exact, but I hope it helps.

My grandma used to make them, but no recipie.
Basically put peanut butter, honey, powdered milk in a big bowl. Mix well, taste often, and tweak ingredients as needed.
(Grandma would put rice crispies in also, then roll in powdered sugar.)
