The article also states that chlorogenic acid is destroyed by heat, so it would be little use making 'green coffee' with boiling water. You would have to extract the acid another way. I think the resulting drink would be pretty disgusting!

If you can find a store that roasts its own coffee, they would probably sell you green beans if you explained why you wanted them.
