i hace a 8 year old cat and sometimes he hisses at my boyfriend out of the blue when they made friends a long time ago

Sounds like your cat is trying to establish a pecking order. It may be your cat's way of saying "Hey, I'm the boss here!"

I don't know the history of your cat, but I have known any number of very good natured cats who will every now and then show fear or hostility around someone they are normally friendly with. In some cases I think a bad memory may have somehow been triggered. I wouldn't think too much of it. We all get grumpy from time to time. I had a cat once with whom I was very close. He was very loving and I was his chosen person. Still, every now and then he would run from me in fear. He would run and hide under a bed and come out a few hours later back to normal. I have no idea why he did this. I just let him have his alone time.

Cats hiss when they are scared or being defensive. Because she didn't know your boyfriend, she probably wanted to warn him to stay back, and keep his distance. Once she realized he wasn't a treat in her domain, she let her guard down. This is completely normal.
