OLD FASHIONED APPLE CAKE:
1 cup sugar
1 cup oil
2 eggs
2 teaspoons vanilla extract
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups sliced apples
1/2 cup chopped walnuts
1 cup chocolate chips (optional)
In a large bowl, mix together sugar, oil, eggs and vanilla. Blend thoroughly.
Sift together the flour, salt, baking soda and cinnamon. Stir in the dry ingredients.
Fold in apples, walnuts and chocolate chips. Pour into the prepared 9 x 13-inch pan and spread evenly.
Bake at 325 degrees for 1 hour. Cool on cake rack.
OLGA's APPLE CRISP:
4 cups apples, peeled and sliced
2 Tablespoons lemon juice
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup water
1 cup granulated sugar
3/4 cup flour
1/2 cup oatmeal
1/3 cup butter
Wash, peel, core and slice apples, toss apple slices in a bowl with lemon juice to prevent darkening. Arrange apple slices in a buttered baking dish.
In a bowl, combine cinnamon, salt and water. Sprinkle mixture over apple slices.
In another bowl combine sugar, flour and oatmeal.
Cut butter into dry ingredients. Spread crumb mixture over apple slices.
Bake at 350 degrees for 40 minutes, or until apples are tender and topping is lightly browned. Serve warm.

I see many good recipes listed here. Did you know you can peel, slice and put them in freezer bags and freeze for a later time? Then when the cold winter comes you can make apple crisp which doesn't take very long to make and it's yummy!
Another thing you can do with apples is quite simple. Peel and slice the apples. Melt 1/2 stick of butter in a skillet and sautee your apples until they start softening, then add 1 tsp.cinnammon and a three Tbs. of sugar (you can use either brown or white). Serve warm and if you have it you can always add a little cool whip to garnish if you like, but they're delicious just like they are also.

Add an apple peeled and diced in a pot of cabbage. It takes out the bitterness.
1 small head of cabbage washed and coursely chopped
1 small onion chopped
fresh garlic
1 small apple peeled and diced
1 tablespoon olive oil
1/2 pound turkey sausage
Salt & pepper to taste
Saute onions and garlic in olive oil for a few minutes. Add all other ingredients plus water to cover. Cook on medium till cabbage is tender.
Apples are also good sliced on roasted pork. Cover roast with slices before cooking. Sprinkle with some brown sugar. Yum.

Well, to get rid of a lot of them fast, you could make Apple Butter and can it.
You can't go wrong with apple pies....You can freeze them unbaked, and people will love you if you give them a freshly baked apple pie. What a nice gift!
I make pork ribs (2 slabs) with stuffing in between...I put apples and sausage into the stuffing.
Make Chicken Valle D'Auge. Chicken with apples in a cream sauce that has Calvados (apple brandy) in it.
Make Apple Strudel...(you can buy the phyllo dough frozen at the grocery store). Nice gift, too.
Make apple ice cream if you have a machine.

I love the apple chips that you can get in the grocery store. If you have a food dehydrator you can make them. If not you can do it in the oven. Warning .... this will take a long time. You can also season them with cinnamon and sugar to help make some of them different. :) You may also like spiced apple rings and there's nothing like fresh apple cider! :) Here's a good site to help with any directions. :)

Stewed apples and cranberries
5-6 lbs of apples peeled, cored and cut into sections.
1 lb of cranberries (fresh if possible)
water
sugar or sugar substitute
cinnamon, ground cloves, ground ginger, allspice
place apples in pot with enough water to cover by about an in inch. simmer on medium to low until apples are tender. add cranberries, let them simmer until the cranberries pop. add spices and sweetener to taste. let simmer for a while longer. You will notice the liquid will reduce and thicken a bit.
I use this by itself, or over Ice Cream, or over pound cake. etc.
It freezes great and you can also give it as gifts around the holidays.
Works great made with pears instead of apples!

I like to put apples and nutmeg in with my pork chops in the crockpot. Quarter about 4 apples, put them in the bottom of the crockpot, put the pork chops on top, sprinkle with nutmeg and/or cinnamon. Cook on high for about 4 hours.

Make Apple Milkshake......
Just cut the apples into small pieces, put it in the blender and add some milk, ice and a little bit of water.....

Lots of good ideas already. The one thing I didn't see is to juice your apples. Takes quite a lot of apples to get a gallon of apple juice.

Pastry for double crusted pie
Wash, peel, core and slice apples, toss apple slices in a large bowl with lemon juice to prevent darkening. In a small bowl combine sugar, brown sugar, cinnamon, nutmeg, salt, flour. Pour over apple slices and stir to mix well.
Arrange apple slices in pastry-lined pie pan. Dot with butter and place top crust on pie, seal and flute edges. Cut slits in the top to permit steam to escape. Bake at 450 degrees for 15 minutes. Continue baking at 350 degrees for 45 to 50 minutes or until apples test soft with a fork and the crust is golden brown. Place a cookie sheet covered with aluminum foil on lower rack in oven to catch drippings.
