Too much milk? Not enough egg?Oven too hot/cool? What did I do wrong?

Oven not hot enough.....and underbaked.

Baked custard mixtures are done when a metal knife inserted off center comes out clean. The very center still may not be quite done, but the heat retained in the mixture will continue to cook it after removal from the oven.

It was most likely overcooked, and possibly at too high a temperature. If you did not bake it in a water bath, the outer temperature got too hot and overcooked the outside before the inside was set. If you did use a waterbath, then you took it out too late. Take out custard when the outer edge is done and the center still shimmies. It will finish baking while it cools. If you wait until a tester comes out clean in the middle, it's overdone and will weep.

The cream did not stiffen as expected. In fact, after the addition of the beaten eggs, the cream became rather watery and could not be used at all.
