Saturated fats are completely "saturated", in other words each fat molecule is covered in hydrogen atoms. Saturated fat is the "villain" of the three types of fat because it is known to increase health risks if too much is eaten over a long period of time. In particular, it has the effect of increasing blood cholesterol levels which, in turn, can lead to heart disease.

don't know how complex an answer you want so will keep it simple and then try to give you the answer I think you want. Saturated or unsaturated refers to the hydrogen on the carbon chains with the fats themselves. Saturated basically means all sites on the fats carbon chain where a hydrogen can be, contain a hydrogen, unsaturated means some of the possible sites are taken up by extra bonds between the carbons instead.
This basically means saturated fats end up being solid eg. Lard where as unsaturated fats end up being viscous liquid eg. sunflower oil. So from a health point think which is easier to carry around in your blood stream.
