Calling the next day seems too desperate. What's long enough but not too long? Two days? Half a week? Week?

Calling the next day is not desperate. It shows that you appreciate she gave you the number. However, I would temper that with the next time you meet, because that really could be an indication of how desperate you are. Ask her to do some atypical, non-threatening dating activity (like bowling or ask her to help you shop for a tie) maybe a week out from when she gave you the number. If you keep the environment non-threatening, it helps dispense with any illusion of desperation.

I say call her the next day as calling her after a week would mean you are even more desperate and have been thinking about this for a week

a day after is fine... nothing wrong with it, it will show that you have actually thought about this girl and took time to ring her.. she will be grateful, but just make the conversation very very brief until you meet up with her next time.
