If you have the time, go to the city of Teruel (capital of the province of the same name). It's a partially walled city, quite old, just walking along the streets. It is a capital, as I said, with a population of about 35,000 people, and, as are most cities in Spain, compact, so you can walk it.
If you want a lot of variety, of course, visit Zaragoza, a city of over 1.000.000 people. Public transportation to and from is good. Visit what is called 'el tubo' (the tube) - which is actually a narrow alley in central Zaragoza, off which are some interesting alley ways. A couple of lovely very spanish eating places, with reasonable prices. (You might want to order garlic deep-fried rabbit!).
Oh yes, there is also the small city of Caspe in the province of Zaragoza. It is a very old town, and the historic site of the Compromiso de Caspe. (the final 'e' is not silent, by the way. pronounce it 'Caspay' with the stress on the first syllable). An easy walk around town. There is a lake nearby as well.
If you like history, and are driving, drive on the road that follows the Ebro river toward Tarroagona. An interesting Civil War battle field (the battle of the Ebro).
