It is an irony that nothing is so appealing as something that someone else has got. It's part proven track record (your girl must be worth having because YOU have her), part 'winning' over you (proving to themselves that they are better than you) and part dejection with the singles market (all the best already taken). Unfortunately, they do it because sometimes it works.
Though distasteful, it does ensure that your girl doesn't stay with you because she has no better offers, and it ensures that you always respect and treat her right (for fear of loosing her).
It's not just girls either, the reverse is also true, for much th same reasons.

because they want whats unattainable, they like to imagine a fantasy relationship with the girl where everything is perfect and the relationship goes there way. I don't really know why guy or girls do this, I guess you cant help who you fall for, or maybe there not ready for a real relationship

because they are idiots, they probably think they will look great if they steal someones woman - like an ego trip.
if you watch i bet the guys who do this are with a gang of mates who they are trying to impress - i suppose that on some primitive level this is like animals showing dominance, they will try this to assert their authority over you and anyone watching?

If people know they cant have that certain person because there unavailable they want them more, so they will try everything in there power to get them!!

they're strokin their own egos. tons of girls are hoe's and when the guy gets em he thinks he's a player and goes bragging to his friends. they do it cause they can.
