Sorry, I don't have the Fairy cake recipe, however, I can attest to using splenda. I am diabetic and bake frequently using splenda. There is a difference in the regular splenda and the splenda for baking. Splenda for baking contains sugar (and is not calorie free). The folks at splenda made that blend special for baking because people complained that their cookies didn't brown. That is the only difference. I use only the regular splenda without problems.
I love my cheese cake recipe.
2 8oz pkgs Cream Cheese(the 1/3 less fat and NOT fat free the texture is all wrong)
2 eggs
1/2 cup splenda
2tsp vanilla
Cream the cream cheese with the splenda. Add the eggs one at a time . Add the vanilla. Mix until smooth.
You can use a store bought graham cracker crust(sugar free), and bake at 350 degrees for about an hour. The center will jiggle slightly when done.
You can change the flavor by adding Key Lime juice (2T) instead of the vanilla, or add some fruit (1/2 cup) if you choose.

I'm not diabetic, but I know quite a lot about blood sugar through diet training at work. May I suggest that you check sites for low GI recipes, as white flour and sugar are both high on the glycaemic index, which is bad for your dad. Try making something like a carrot cake with wholemeal flour and brown sugar-carrots make it sweet-and because the flour is low GI it will help regulate blood sugar levels. My favourite book is Can't fail cakes, by Mitzie Wilson. There is also a recipe for chewy bars made from wholemeal flour, oats, fruit and honey in there. You can also try googling sugar free cakes which will bring up other options for you. How nice of you to be so thoughtful xx :)

I have had a look on line and found that if you substitute sugar with splenda you do not need to change the amount ie for cakes you use
4oz of self raising flour
4oz Butter/Margarine
4oz sugar (which you would use splenda instead of the sugar)
2 eggs
hope this helps as I am thinking of doing same for my dad as he is also diabetic have only recently got to know him so haven't tried it yet.
