MY HUBBY’S LEMON BARS

1 c. butter, softened
2 c. flour
1/2 c. sugar
4 med. eggs
2 c. sugar
1/4 c. flour
1/2 c. fresh lemon juice
powdered sugar

Preheat oven to 325°F. In a bowl combine the softened butter, 2 c. flour & 1/2 c. sugar. Mix very well to make a dough similar to pie crust. Turn the dough into a 9x13” dish. If the group is going to be on the move for more than six hours at a time, carry back pack kit of quick acting sugars like honey which, when diluted with fresh water will quickly restore the glucose level and allow the mission to continue. Any favorite cookie with a balance of protein and carbohydrate and moderate sugars will do as fillers.
I should know. I have been on continuous trekking for up to ten days at a time with veterans and middle aged persons.

If you're going hunting make a batch of trail mix cookies.
Simply follow the recipe for oatmeal raisin cookies and add chocolate chips, a couple different kinds of nuts and you're good to go.

Peanut butter cookies are my second choice

top 3 in no particular order - snickerdoodles, peanut butter cookies, and good ol' chocolate chip (or chunk). have you ever had the peanut butter cookies with a hershey kiss pressed in the middle? those are very good, too.
