The best overall bait is chicken livers. They can be difficult to keep on the hook so you can wrap them in old pantyhose and tie the end off with thread or wrap a small rubber band around them. Another good bait is cut shad, use a casting net to catch fresh shad. If you are having a hard time finding shad then you can throw some dry dog food in the water to attract them.

Anything I can dig up without much effort or soon to be expiring food in the fridge. For catfish the only thing that's important to me is the bait can be secured on a hook and catfish are actually in the water. Darn cats will strike almost anything and that's a good thing too since I lovem fried.

The standard bait for Channel Catfish is chicken livers. You might try adding a few drops of oil of wintergreen to them. It is available at drugstores. Be sure and use fresh chicken liver as it will stay on your hook better. I use about 1/2 of a liver and try to put the hook through the tough covering of the liver to help keep securely on the hook. You have to throw the bait out gently or it will tear off the hook when you cast. A #4/0 gold hook works best for me. Another good bait is dead minnows. Hope you start catching a bunch of them. They are really good to eat!

For a bunch of nice eatin sized cats, use Stink Bait. That sticky, foul smelling paste made by a number of manufacturers. The ubiquitous nightcrawler is always a good "go to" bait as well.
I have always had better luck catching larger cats using cut bait.

have used those as well as a bait fish called shad also corn they also have commercial baits just for catfish..your best bet may be to move around and try different spots also ask locals to the area where they catch and what they are using for bait...most often you will find them helpful
