sometimes onions say really mean things. How can you not cry.

When you slice an onion, you break open cells that contain enzymes. The enzymes combine with other things to form a gas that contains sulfenic acids. The gas hits your eyes and combines with the natural moisture to form sufuric acid, and that's what irritates your eyes.
If memory serves me properly, the things that affect the intensity of the sulfuric acid are: type of onion, soil conditions, age of the onion, and storage method.

Cuz some onions are considerate of peoples feelings and other onions dont give a crap and like to belittle you.

I don't know. But here's something that helps. When you cut your onion in half, run water over it and it will help control the "sting". :)

some onions are real strong, to make them eye friendly, i soak them in salt and water for a hour to easy my tears.............

it actually ahs to do with your knife. if your knife is sharp the onions won;t affect you as badly. it has to do with cell wall damage and all that jazz.

wear safety glass while cut onion it will help :-))

The age maybe? Peel them under water.
They may just be insensitive.
