I mean is it edible and worth doing?

I'm sure it's edible, the thing is, would you eat pumpkin raw anyway? The dehydrator works best on un-cooked foods (except for applesauce fruit roll-ups).
You could probably sprinkle the pumpkin with some spices (pumpkin pie spice comes to mind) and dehydrate it. It really doesn't sound appetizing to me, though.
The only other idea is to go savory, sprinkle it with salt, or go wild and try curry spices, or garlic salt, something like that. It might taste like a pumpkin chip. There's only one way to find out if it tastes good, since it's all subjective anyway.
