Try the Riviera Maya. It's not presicely South America, but it's got some of the most wonderful beaches, resorts and paradise-like places on earth! Avoid Cancun city or beach and go south to Tulum or places like that.

one word Peru , why? because it has the best food variety and the most variety of sea food in all of latin america yeah you heard well my friend i lived in Peru for 5 years i"m scottish and i cant stop talking good things about the country you can enjoy un-touched jungle in the amazon , snow boarding in the central region of ancash deserts in the south the high andes in the cordillera , a vast sea full of animal atractions beaches as far as your eyes can see , and as i mention before the food my friend the food, now this is not my word not even a simple comment but hard facts and many world awards in cousine, that no other country in the south can claim, now let me tell you mexican food is good but peruvian food is by far much more tasty and a lot more variety ; you can eat in peru every day of the year with out repeating a single dish.
now if you want to enjoy europe like cities go to Lima the capital city and you will encounter huge shopping malls just like in canada or ancient cathedrals just like italy or spain , you can go along the coast using the green coast highway and visit the beach restaurants i recomend the Rosa Nautica or the Nautic Rouse top of the line in sea food and other dishes many hotels are high class from fairmont hotel , lima sheratton hotel just to mention two ,montains are in abundance in peru the people cannot be more frendly and if i mention the Inka ruins and the many sites that you can visit , machu pichu, nazca lines,tihuanaco ruins, chavin ruins, the great museums, cuzco and lima are named world patrimony for the beauty of this two cities,and still i have to tell you about the highest lake of the world lake titi caca , visit areqipa also where the misty volcano is situated, this volcano is no active and is covered in snow, the climate varies from place to place lima is usualy 18c to 26c, Peru has the second best economy of latin america and the government is very stable the money change to dollars is about $1 dollar for 3.25 sol so that tells you about their economy atm machines,internet service,cellular service,american and european food chains are everywhere, all that you enjoy in america you can enjoy in peru. go to peru and you will be amazed is the whole package no doubt, i will be coming back to peru to stay next year the country is booming with prosperity.

The Galapagos Islands off the coast of Ecuador. It is an animal and plant sanctuary and you will see species of animals there that you won't see anywhere else in the world. And the best thing is that they don't even run away when you go near them.

Argentina.
In one trip you can see Rain forest, desert, Beaches, Lakes and Glaciers! No other country in Latin America can give you all that.
And the prices are great, excellent food, beautiful and elegant people, amazing architecture, you can find leather and antiques for reasonable prices, and the nightlife is like no other!
