A bought a pork loin yesterday and cooked fajitas with half of it does anyone have a good recipe for the other half ? (I would like to cook it on the grill)

Take two pieces of heavy duty foil and place one on top of the other on a flat surface.

Cut two celery stocks the same length as the loin, cut thru the center and make 2 halfs of each stalk. Place these side by side. Salt and pepper loin completely and lay on top of celery.

Now pick up foil with celery and loin and place in a shallow pan. Peel and slice one large onion and place slices on top of roast.

Mix 1/4 cup Worchestershire Sauce, 1/4 cup Soy Sauce and 1/2 cup of cold water (use Wine in place of water if you'd care to) together and pour over onions and loin.

Join lengthwise parts of foil together and fold together. Now fold the sides up the same way thus sealing the loin in the foil.

Take foiled loin out of pan and place on the grill. Cook for 1 1/2 to 2 hours on grill. (I prefer charcoal grills over gas grills myself) Remove loin from grill and drain most of liquid out from one end and discard. Open the foil and fold sides in making a pan, make sure there is still some liquid (if not add some water) and place back on grill. Cook on grill until pork is browned to your liking.

The celery serves as a barrier so your roast doesn't burn on the bottom as well as adding a flavor to the roast. The onions cooking from the top adds an additional flavor and the liquid not only adds additional flavor as a marinade but tenderizes the roast at the same time. I do think you will be surprized at the outstanding flavor.

If per chance you have any left over from this (I doubt you will) chop up the left over meat and make Fried Rice with it. (One of my favorites)

P.S. This method can also be used for Beef Roast and can be accomplished in your regular oven the same way. I also add Garlic to my Beef Roast but do not care for it on Pork. It is a simple method, time saving and little or no clean up mess either.
It can also be used with Hams but use nothing but Sliced canned Pineapple and Brown Sugar and a cup of water in place of the Soy Sauce and Worchestershire Sauce.

ADIRONDACK PORK CHOPS

4 loin pork chops, about 1 inch thick
Salt and pepper
2 med. yellow onions, peeled
1 green pepper, cored, seeded, and quartered
2 carrots, scraped and halved
2 med. potatoes, quartered
1 tbsp. lovage or celery leaves
1 clove garlic, finely chopped
1 c. tomato sauce
1/2 c. white wine

1. Sprinkle both sides of chops with salt and pepper.
2. Put chops on grill, 5 minutes the side.

3. Fold in half a strip of aluminum foil about 5-6 feet long. Place chops in a single layer on the folded sheet. Scatter over the chops the onions, green pepper, carrots, potatoes, lovage, and garlic. Pour the tomato sauce and wine on top.

4. Fold the lower half of the aluminum to an inch of the top and make a firm seal. Fold the side edges to seal. Fold the top edge down about an inch to make a re-seal. Repeat with sides. Keep folding top and side edges until the contents are snug in the pouch.

5. Place pouch on grill just to the edge of the intense heat. After 5 or 10 minutes you will hear the contents simmering. This should be gentle. If there is rapid boiling, move the pouch further way from the center of the fire.

6. Rotate the pouch a quarter-turn every 15 minutes to assure the contents cook evenly.

7. After 1 hour of simmering, remove the pouch from the grill. Remove chops and vegetables and ladle sauce over all. Serves 2-3.

Since it is a day old now I would suggest brining it for a few hours before grilling. This will ensure the end product will be juicy. As was previously suggested don't wrap it in foil. This will just steam the meat in it's own juices and not grill it. Another method you could use is pan-searing the loin and finishing it in the oven.

Last night I made grilled herbed pork loin from that sight, and yum, yum, yum good

Boil it in half a pan of grape juice, add some soured cream, simmer for about eight minutes, add a few capers, a squeeze of lemon and some parsley, then place in a greaseproof baking tin and roast it at 250 for ten minutes, remove from the oven, sprinkle with finely-chopped grapes and anchovy-stuffed green olives, leave to cool for quarter of an hour, then tip the whole sorry lot into the bin.

slice into 1/4 to 1/2 '' marinate with some jamican jerk sesoning..for ..at least 1 hour...take out ..grill untill almost done...get some kind of pepper jelly..i make the best...melt in micro...brush on the most wonderful chops you will ever have...serve with pineapple rice...fresh peaches ..stuffed with fresh grated cheese and maybe a green salad....and anything else you may want..wine maybe

if u have a rottisere stick on ur grill just stick the other half on there with a little bit of seasoning thats good

soak in BBQ sauce (ketchup, suagr and liquid smoke will work) add red food color. Sit in bag over night. BBQ. Let sit. Slice and seve with hot mustard, kethup nad sesame seeds for dipping. Use real dry mustard add water, stir. Tis good.

wrap it in tin foil and trow some onions and pepper salt and pepper on it and let it grill. Make sure to flip it other wise it will burn on one side....yummy
