The E. coli bacteria is found in the digestive tract of most animals. It is also in soil. It is essential to humans because it produces vitamin K. The specific E. coli bacteria O157:H7 is very pathogenic to humans sometimes causing hemolytic uremic syndrome. This same bacteria infects animals but does not cause disease symptoms in them. The manure from infected cows may be used for fertilizer or runoff sewage from a feed lot may contaminate the irrigation water. The resultant plants will have the E. coli bacteria inside their stems and leaves. That is why rinsing the vegetables is not sufficient. Cooking destroys E. coli but unlike spinach, few people eat cooked lettuce.

The e-coli bacteria would come from animal feces. The e-coli in human intestines is different from say the e-coli from a cow found in ground beef. The animal strains are pathogenic to humans.

I think that is what they are trying to figure out. Ecoli is in the waste of animals, including humans. It is the workers are using the field as a toilet OR is it the unprocessed animal waste the farm is using for fertilizer (natural not chemical) OR is it bad processing OR is it the plastic.

The workers go to the bathroom and have nowhere to wash their hands, if they poo in the field or in a port-a-potty they still do not wash their hands. Think about it, have you ever seen a nice clean bathroom with running water next to a field?
