If you mean baking yeast, no, not if you want it to taste good. Baking yeast will ferment the sugars, it will make alcohol, but it's not the kind used which will settle out of the wine when the fermentation is complete, nor will it leave clean wine flavor when it's all done. It stays suspended and leaves whatever you fermented with it tasting very yeasty and quite nasty.

Do a google search for a home brewing supplier near you. You can pick up a packet of wine yeast (there are varieties for red, white, champagne, etc) for about a dollar or so which will do a much better job making your wine.

First of all, I want to correct a couple of inaccurate answers to your question. Fermentation DOES require yeast, because the yeast is what eats the sugar and produces the alcohol. As for what kind of yeast, regular baking yeast will ferment, as will the "wild yeasts" that are in the air around you right now. However, they will likely produce unwanted tastes in your wine, so it is best to use a wine yeast. I speak from experience, as I used to brew wine before I switched to beer (There are enough good wines I can buy, but a good variety of beer is harder to find in my area). The two best resources I had when brewing wine were a book by Terry Garey titled "The Joy of Home Wine Making", and the knowledge and experience of the owners of the local homebrewing shops, who were always happy to help and advise. I would recommend you look up a recipe and get the specific winemakers yeast that is recommended for elderberry wine. The yeast is what ferments the sugar into alcohol.

No. You must use a wine yeast; usually a sherry yeast. But you can read more on wine-making websites, which also usually sell such types of yeast. A lot of times they offer recipes as well.

I agree with World You don't need yeast to make wine. Crushing the fruit actually initiates fermentation, but sugar improves it.

It takes about 350 pounds of crushed grapes to fill up a jack daniels' barrel. We add 5 pounds of sugar to each barrel. No yeast.

I have been doing this for a long time and never have used yeast.

a red wine yeast is best, but regular yeast will work too, but not as good

you can use a regular yeast it does change the taste of the wine but it does work i also add sugar to mine it gives the wine a higher alcohol content
