I bought some pumpkin seeds from Trader Joe's, in a bag. They're "in shell," "dry roasted" and "lightly salted." They're really good, but strangely chewy (I've only ever eaten pumpkin seeds hot, crunchy, and immediately out of the oven!) Am I doing it wrong or something? Are you supposed to remove the shell, like sunflower seeds?

When you scoop them out of the pumpkin, you rinse them, then lay them out on a shallow pan. Salt them and cook on a low heat (250?) for quite a long time - 45 to 60 min. I usually judge them by appearance. They come out a little chewy, nutty-tasting and salty. Annual tradition. Enjoy.

They are a softer shell than sunflower seeds. You can eat the whole thing or you can remove the shell. It is up to you. I like to suck the salt off of the shell before I eat them. But then they get too chewy so I have to take the shell off.

I found that Dave's Pumpkin Seeds were the best.
And "yes" just crack them and eat the meat and discard the shells. Never ate them while they're hot.
