It really doesn't matter at all what kind of chicken it is or that it's chicken. The question is what kind of DISH it is. Chicken can be super light, like say chicken with lemon and basil. Chicken can be super heavy! You can make chicken in a heavy marsala sauce, or chicken with a super thick red sauce. These are completely different types of flavors.

So say that you feel a light chardonnay goes really well with chicken with lemon and basil. Then you try a light chardonnay with a heavy chicken-with-thick-red-sauce recipe. You probably wouldn't even taste the chardonnay! It would be completely drowned out by that heavy sauce. All you'd taste is "liquid something" :)

It also depends on what you personally like. If the ideal pairing for a dish was a crisp sauvignon blanc, and you hate the grassy flavor of sauvignon blanc, then it's a meaningless pairing for you. You have to drink things you enjoy. That is what the best pairing for you is.

So when you taste the dish, think about how heavy the flavor is. Then think about what wine you enjoy that is about that same level of heaviness. That is what pairing is all about. Half the fun is experimenting and seeing which of your favorites go well together!

First of all, you should drink the kind of wine YOU like.

But for guidance about wine and food pairings, the simplest rule is to judge how hearty the chicken dish is.

Skinless white meat chicken (like boneless breast meat), prepared lightly seasoned without a sauce couldn't stand up to a red wine. You'd be better off with a white. Keep it simple. Chardonnay, Pinot Grigio--if you're entertaining a crowd, most will accept that. Delicate flavors lead to white wine under most conditions.

But if you're barbecuing, and/or serving dark meat chicken with a hearty sauce, then go for a red. Merlot is pretty generic for that.
Even plain chicken with pasta needs a red if you're serving marinara sauce.

If you're making a traditional fried chicken dinner...then the choice is yours. Either white or red would work.

I tend to pair chicken dishes with white wines but lighter red wines would work as well.

Cream Sauce with the chicken - Chardonnay (Oaked)
Spicier sauces - Gewurztraminer
Citrus based sauces/salsas - Sauvignon Blanc or Riesling
Roast chicken - Pinot Grigio

If you want to put a red wine with it, I would stick with either Merlot or Gamay Noir. Anything heavier than that would overpower the food.

Generally with chicken, you drink white wine...Red wine is usualyy consumed with red meat.

If you are having chicken chasseur however, a light bodied red is a good match..

If you are not completely sure, ask the Vigneron at the bottle shop.

How about a nice bottle of Beringer Chenin Blanc or a Vouvray from France made from the chenin blanc. Both are going to be fruity with a trace of sweetness that would compliment the chicken.
