Is there something like a calliper with springs on it that will measure force of a spring? Specifically I want to measure how much force earplugs exert when compressed. Are there other methods?

The problem you've got is that you want to measure a compression force but a spring balance, the most common force measurer, measures a tension force. Have you considered placing the earplugs on the tray of a weighing machine and compressing them?

Sure, you can go to the local sporting goods section and buy a fish scale, which is used to weigh fish, but can be used as a cheap way to measure force. It's not terribly accurate, but it'll do in some cases.

You can use what you described, once you calibrate your spring, by measuring the distance compressed for difference forces
