INGREDIENTS
1 cup sifted self-rising flour
1 cup milk
1 egg
2 tablespoons vegetable oil
DIRECTIONS
Beat eggs, oil, and milk together, and add to flour. Stir until combined.
Heat a greased griddle until drops of water sprinkled on it evaporate noisily. Pour 1/8 to 1/4 cup batter onto the griddle. Turn over with a metal spatula when bubbles begin to form on top. Cook second side to a golden brown color.

Easy Pancakes
* 1 cup all-purpose flour
* 2 tablespoons white sugar
* 2 tablespoons baking powder
* 1 teaspoon salt
* 1 egg, beaten
* 1 cup milk
* 2 tablespoons vegetable oil

DIRECTIONS

1. In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the center, and pour in milk, egg and oil. Mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Add 1/2 cup fresh or frozen blueberries for blueberry pancakes.
You can also add cut up bananas,strawberries,peaches,or any fruit you like.

Here's the receipe I use to make Pancakes

INGREDIENTS

* 1 Tbsp of Lemon Juice
* 2 Cups of Milk
* 2 Cups (10 oz) of All Purpose Flour
* 2 Tbsp of Sugar
* 2 Tsp of Baking Powder
* 1/2 Tsp of Baking Soda
* 1/2 Tsp of Salt
* 1 Large Egg
* 3 Tbsp of Butter, Melted & slightly cooled

NOTE: You can replace the Milk & Lemon Juice with 2 Cups of Buttermilk if you have it on hand.

INSTRUCTIONS

1) Whisk Lemon Juice into Milk & set aside for at least 10 minutes

2) Whisk Flour, Sugar, Baking Powder, Baking Soda & Salt in a medium bowl.

3) Whisk the Egg, melted butter & milk mixture (or buttermilk) together in another bowl.

4) Mix the wet ingredients into the dry ingredients until it's just combined. DO NOT OVERMIX! The batter is suppose to have a few lumps.

5) Heat a greased 12-inch skillet over medium heat for 5 minutes OR heat a greased griddle to 350 degrees. Then, pour batter onto skill (or griddle) & cook for 1-1 1/2 minutes per side.

Here's a great wheat pancake recipe:

1 large egg
1 c wheat flour
3/4 c milk
1 TBS packed brown sugar
2 TBS veg oil
3 tsp baking powder
1/4 tsp salt
1/2 c berries, chocolate chips, or nuts

Beat egg. Add rest of ingredients and mix until smooth. May add 1/2 c berries, chocolate chips, or nuts. Spray pan or use nonstick frying pan and preheat. Pour in small amounts onto hot pan. When bubbly flip and cook other side. Will cook fast.

Let me share a recipe with you... It is called "Coconut Pancake" or here in Malaysia, we Malays call it "Lempeng Kelapa"...

My mom uses to cook it since I was young (even until now she still does) especially during the weekends... We usually eat it for breakfast... It doesn't cost so much but it is very filling... You can eat it with curry or beef/ chicken rendang... Kids sometimes like to eat it with sugar or condensed milk...

Here's the recipe...

Ingredients:

2 cups flour
1/2 cup coconut, grated
1/2 teaspoon salt
1 teaspoon sugar
1/2 teaspoon bicarbonate of soda
1/4 cup coconut milk
1/2-1 cup water
1 Tbsp of oil

Instructions:

1- Mix all dry ingredients.

2- Stir in milk, water and mix (like a pancake batter)

3- Heat 1 tbs oil in nonstick fryingpan.

4- Pour a ladleful of batter and cook until golden.

5- Served with leftover curry or beef/ chicken rendang etc.

This batter recipe can be used for pancakes or waffles.

2 cups flour
3 Tbsp sugar
3 tsp baking powder
1 tsp salt
2 eggs
1 to 1-1/2 cups milk
4 Tbsp melted margarine

Directions: Beat eggs, add remaining ingredients and mix. Use preheated griddle or waffle iron.

I use Bisquick Mix and it makes very good pancakes and waffles.
