I have to do 40 cookies in the shape of a 3-tier wedding cake and I need a real good recipe for the cookie that won't make the cookies puff up but also make them not break while I am decorating on them. I tried the Wilton sugar cookie recipe but the cookies puffed up too much.

You might want to wait until the cookies cool completely, if they are too puffy to decorate. If the they cookies break, cook them in the center of the rack. Place the rack directly in the middle (not too close to the top or the bottom. It is alright if the cookies are a little brown, the cookies will be crispy instead of crunchy. Keep a close eye on them, they will brown fast once they are cooked.


Pattern Cookies

INGREDIENTS
2/3 cup shortening
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup milk
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
DIRECTIONS
In a medium bowl, cream together the shortening and sugar. Beat in the eggs, one at a time, then stir in the vanilla and milk. Combine the flour , baking powder and salt, stir into the wet mixture. Cover and chill for about 1 hour.
Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper. On a lightly floured surface, roll dough out to 1/4 to 1/8 inch thickness. Cut into desired shapes with cookie cutters.
Bake for 8 to 10 minutes in the preheated oven, until middle of cookie springs back when touched. Cool on wire racks. Frost with frosting if desired.
