"Spaghetti Squash Casserole": 1spaghetti squash/ 2 carrots/ 2 celery stalks/ 1 yellow onion/ 1 red bell pepper/ 2 tablespoons olive oil/ 1 (28oz) can crushed tomatoes/ 3 garlic cloves minced/ 1/2 teaspoons dried oregano, dried basil/ 3/4 pound mozzarella cheese/ 1/2 parmeson cheese. *****quantity for 500 people******

Your not giving us enough info to properly to find the weight of some of these ingredients. Also you need to determine what size portion you are going to serve, such as an 8 oz portion or a 10 oz portion. Take the squash, for example. Squashes come in different sizes, while this is not too important now, if your recipe calls for a 16oz squash(large) and you get 12oz squashes(med.), you are going to be very short on casserole after scaling up to 500 servings. This goes for the onion, carrots, garlic and the pepper as well. The olive oil, tomato, oregano, and cheeses will all convert nicely though....but only after you decide on what size portion you are going to serve. Good luck!!!

i guess go up times 50
so 50 squash 100 carrots...etc
