Courtship can be thought of as behavior in animals to attract a mate, like the courtship of birds verses courtship of lions verses the courtship of fish, all very different behavior patterns. Courtships can be very complex, humans being the most complex. Dating is just one act of human courtship among many acts or behaviors.

courtship is more traditional with fancy dinners and all those things, but its just one on one without courting others. Dating, well thats more modern, and in peoples eyes, if they are "dating", then you can date more then one at a time. Courtship is more formal then that, its almost like having the title bf/gf because you already have a commitment to one. Dating has no commitment, so you can date as many as you like.

Courtship indicates more seriousness in getting to know someone -- maybe even engagement or a serious leaning towards that. Dating is checking things out on the barest level -- is this person fun to be with? Do I like the way they look? Courtship goes beyond that -- goals in life, getting to know the person beyond the obvious.

They both describe the same action. Specifically, courtship was a term used a few years back to describe a man/woman or boy/girl being together...love being the object. Back then it meant for the purpose of getting married. Parents back then didn't believe in a letting a boy just fool with his daughter and then let her go. And if she had brothers, you darn well better be stepping right.
Today...dating means practically the same...just have more varieties sand not nearly as serious.
