OYSTERS ROCKEFELLER
Rock Salt
3/4 c butter
3 tbsp minced green onion
3 tbsp minced parsley
1/2 cup bread crumbs
1 1/2 c PERNOD
1 tsp celery powder
2 tsp lemon juice
1/4 tsp cayenne
24 bacon pieces (1 inch)
24 oysters on the half shell
Preheat oven to 425F. fill 6 pie plates (8inch) w/ Rock salt. Place oysters in plate. Heat 1/4 c butter until foaming; add minced onion and cook until soft. Stir in parsley,PERNOD,celery powder, lemon juice and cayenne. Add remaining butter and mix thoroughly. spoon mixture onto oysters by 1/2 tsp. Top w/bacon.
Bake 8-10 minutes. Serve
CAVIAR PIE
6 boiled eggs, chopped
3 tbsp mayonnaise
1 lg sweet onion finely chopped
1 (8oz) pkg cream cheese
2/f3 cup sour cream
7 Tbsp. (3 1/2) oz ROMANOFF CAVIAR (I suggest Black Lumpfishor whitefish caviar)
Lemon wedges and parsley sprigs for garnish
Grease springform pan.
Combine eggs and mayo.
spread even layer in bottom of pan.
Sprinkle w/onion
combine cream cheese and sour cream until smooth. drop by spoonful unto onion. Chill 3 hours. top w/ caviar. Arrange lemon in open pinwheel. Fill center w/parsley. Serve w/ pumperknickel bread.
CHAMPIGNON CHICKEN PATE`
1 can (5 oz) chunk chicken
1 can (2 oz) mushrooms drained & chopped
2 tbsp mayonnaise
2 tbsp finely chopped onion
1 tbsp. finely chopped parsley
2 tsp. worcestershire
Combine ingrediants: Chill
Serve on crackers about 1 cup
Not the same as chicken liver pate but chicken is always a popular choice for guests who are picky.
SALMON LOAF
1 tbsp lemon juice
2 c flaked salmon
1 medium white sauce
1/2 c condensed milk
1/2 tsp salt
1 egg beaten
1/2 c celery, chopped
1 c dry bread crumbs
Add lemon juice to salmon
add remaining ingrediants, mix well
Bake in greased baking dish at 350 until brown and set about 30 min.
serve 6
WHITE SAUCE
2 tbsp butter
2 tbsp lflour
1/2 c heavy cream
1/4 tsp salt
melt butter add flour & blend
add cream and cook over low heat until thick stirring constantly. add salt
Standard party shrimp trays, vegetable trays and dips such as artichoke and spinich if you have a trust worthy grocer.
Also, mini quiches, and mini cheese cakes, the standard cheese balls with port wine and a well stocked bar.
Save time and cater but if you want to do the work it is just as rewarding. Have a great party.

Really good Chip Dip:: * = Anything that's optional -2 Cans of refried beans -Jar of Salsa -Lots of Cheese (Either Cheddar or a mix of Monterey Jack and some sort of yellow cheese). -Mexican Rice* (You can buy the little bags that come with the rice and seasoning already put-together and you just add water & cook.) -Tabasco or Hot Sauce* -Chips (Would suggest Tortilla Chips) Make the rice & heat the beans (If usuing Tabasco or Hot Sauce add into the beans as they cook). Mix together the beans & rice. In a large baking dish lay down the rice & beans mix. Here comes the fun part. You have two choices... A) Layer some salsa then crumble up some chips into medium or small pieces and sprinkle them across the bean mix. Add more salsa (You don't have to use a full jar). Add the cheese on top & bake at 300 until the cheese is fully melted. This is better to serve warm. B) Layer the salsa then add the cheese & refridgerate (no more than a couple hours). Serve as is. For future events you can even add some ground beef into the mix and serve it as a side dish to any mexican plate instead of a dip. =)

Jalepeno poppers are so good and everytime i have gone to a party they always get finished before all the other appetizers.. This recipe calls to cook them in the oven, but we like to put ours on the grill to make the bacon a little crispy they are soooo good. And a tip make sure every seed is out otherwise you will be in for a little surprise..and actually they are not spicy once cooked....Hope this helps!
INGREDIENTS
18 fresh jalapeno peppers, halved lengthwise and seeded
1 (8 ounce) package cream cheese, softened
1 (5.25 ounce) package frozen vegetarian bacon strips, thawed
1 box toothpicks
DIRECTIONS
Preheat oven to 350 degress F (175 degrees C). Spray a baking sheet with cooking spray.
Fill each jalapeno half with cream cheese. Wrap 1 bacon strip around each jalapeno half and secure with a toothpick. Arrange wrapped jalapenos on baking sheet.
Bake 12 minutes in preheated oven, or until bacon strips are crisp. Serve warm.

Wrap shrimp in procuitto and drizzle with olive oil and either bake at 450 for about 8 minutes, or grill. You can coat these in a BBQ sauce if you want to add a flavor, but alone they are great.
You could get individual martini glasses and serve indivdual shrimp cocktails, chill the glasses and add the coktail sauce to the bottom, and ring it with shrimp and lemon, serve chilled.
You could also make some rolll ups, get some cresant rolls, and fill them with crab or shrimp with some aloutte cheese and bake them until golden.
Take some chicken and make a skewer, a small one and grill them, have dipping sauces ready for that, peanut, sweet and sour, make it look fab!
buy some GOOD cheeses, make a VERY FANCY cheese tray with fruit and assorted crackers ...check out Paula Deans webpage for that. Make it look nice, serve on wood with leaves to accent.

Finally here is a stuffed mushroom recipe that doesn't have seafood in it.
12 jumbo mushrooms
1 1/2 lbs. medium sausage
2 green onions chopped
8 oz. pkg. softened cream cheese
Italian bread crumbs
With a teaspoon hollow out mushroom caps rinse and set aside. Cook sausage well done and drain, add onions and cream cheese to hot sausage . mix well . Stuff mushroom caps and top with bread crumbs Bake at 350 for 10 - 15 min. until brown

high end is so trendy -- a few years ago it was mini-brulees and deviled quail eggs sprinkled with caviar. both are good but i think if you serve them now you will be considered a has been hack. i usually go for a big bowl of shimp and a couple sauces. try some tapas ideas -- you can go miles on basic tapas and if people aren't used to things like tortilla espana and salsa brava it is considered fairly exotic. serve with lots of sangria -- cava sangria is even better for a brunch. cant go wrong with the tapas thing.

Is the party themed in any way? If so, then try thinking along the lines of that. If not, then maybe sushi, or artichoke hearts and dip. Something delicate that pleases the taste-buds without ruining the main course.

Finger sandwithches are always great. Cut bread into little squares or triangles. Don't over stuff. Use simple thinks like cucumbers manyaise ranch lettuce tomato, even beef is delightful. Also stufeed tomatoes are wonderful to. I hope u the best

Bacon wrapped dates are awesome. Wrap a date in 1/2 piece of bacon, hold with a toothpick. Bake in oven at 375 until crisp.

Try rotel. It's a cheese dip eaten with tortilla's. It's just hamburger meat, optional, cheese such as velveeta, rotel (add juice in), and picante sauce. It's prepared in a crock pot on low so the cheese will not storch. Also, lil' smokies in bbq sauce, warmed in a crock pot, is good. Enjoy
