Simply because it's your subconscious mind and there's no controlling it. Control is in the conscious mind and, since it's asleep, there's no control... simple.

When you sleep/dream, your brain is reorganizing itself.
Sorta like cleaning up a room. Your room will look messier before it gets cleaner, because you're throwing random stuff around.
The problem is, your brain has to make a "story" out of all the random stuff it's throwing around. That's why dreams are so random, but they involve pieces or your memories.
This is a drastic over-simplification, there is much more to it than this, for example lots of people dream of being naked in public, perhaps because it's related to fear, which is possibly another factor in dream content, etc.

dreams are not what people think they are. dreams are symbols. some people dream in initials, like your initials, that of you spouse, school, workplace, etc. other people dream in other ways, like climbing a building could represent a long and tiring task. You have no conscious control of your dreams, so they should be interpreted metaphorically, not literally

Last night i dreamt i was being chased by a load of Frankensteins . Imagine my surprise at discovering on waking up that i had **** the bed.

I've heard that you dream about the last thing that is in your mind before you reach REM sleep, could be, I'm always "dreaming" about work!! (or nightmare!!)
